Seasoned Korean Fried chicken

There are many different types of Korean chicken recipes, each with its own unique flavor and style. Some of the most popular types include:

Korean Fried Chicken, also known as KFC, is a popular dish in South Korea that is made by deep-frying chicken twice to create a crispy, crunchy exterior. The chicken is usually coated in a flavorful and slightly sweet sauce, and is often served with pickled radishes and beer.

Here's a basic recipe for making Korean Fried Chicken:

Ingredients:

1 lb chicken wings or drumettes

1 cup all-purpose flour

1 tsp baking powder

1 tsp salt

1 tsp black pepper

1 cup cold water

vegetable oil, for deep-frying

For the sauce:

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp honey

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves of garlic, minced

1 tsp grated ginger

1 tsp gochujang (Korean chili paste) (optional)

Instructions:

In a large mixing bowl, combine the flour, baking powder, salt, and pepper. Mix well.

Gradually add the cold water and mix until the batter is smooth.

Heat a deep fryer or a large pot with vegetable oil over medium-high heat to 350°F (175°C).

Dip the chicken pieces in the batter, making sure that they are well coated.

Carefully lower the chicken into the hot oil and deep-fry for about 7-8 minutes, or until golden brown.

Remove the chicken from the oil and drain on a paper towel-lined plate.

In another pan, over medium heat, combine all the sauce ingredients and stir until the sugar is dissolved.

Once the sauce is ready, add the fried chicken and toss to the coat.

Serve the chicken with pickled radishes and beer.

You can adjust the ingredients to change the taste, for example if you want it less sweet, use less brown sugar, or if you want it more spicyer add more gochujang. Some people also like to add some corn starch to the batter to make it even more crispy.

Note:

Make sure to use cold water when making the batter, as this will make the chicken extra crispy.

Double frying the chicken is important to make it extra crispy, so don’t skip it.

Be careful when frying the chicken, as the oil can splatter and cause burns.

Let the oil cool down before disposing it.

Add the garlic and stir-fry until fragrant.

Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes.

Add the cabbage, onion, and sweet potato, and continue to stir-fry until the vegetables are tender, about 5-7 minutes more.

Serve the dakgalbi over rice and garnish with chopped green onions and sesame seeds, if desired.

You can adjust the ingredients to change the taste, for example if you want it less spicy, use less gochujang, or if you want it sweeter add more honey. You can also add more vegetables to make its healthier like bell peppers or carrots. you can also add some cheese on top just before serving to give it a different taste and texture.

jjimdak

Jjimdak is a popular Korean dish that is made by braising chicken in a flavorful sauce that includes soy sauce, brown sugar, and various spices. It is often served with vegetables and is a hearty, comforting meal. The dish is often made with a whole chicken, but can also be made with chicken thighs or breast. Here's a basic recipe for making Jjimdak:

Ingredients:

1 lb boneless, skinless chicken thighs or breast

1 onion, sliced

2 cloves of garlic, minced

1 cup of sliced carrots

1 cup of sliced sweet potatoes

1 cup of sliced mushrooms

1 cup of sliced green onions

1/4 cup soy sauce

1/4 cup brown sugar

1/4 cup mirin

2 tbsp sesame oil

2 tbsp rice wine

1 tsp black pepper

2 cups of water

2 tablespoons corn starch mixed with 2 tablespoons of water

Instructions:

In a mixing bowl, combine the soy sauce, brown sugar, mirin, sesame oil, rice wine, and black pepper. Mix well.

Cut the chicken into bite-sized pieces and add them to the marinade. Mix well and set aside to marinate for at least 30 minutes.

Heat a large pot over medium-high heat and add the marinated chicken. Cook for about 5 minutes until browned.

Add the sliced onion, garlic, carrots, sweet potatoes, and mushrooms, and stir-fry for a few minutes.

Add the water and bring the mixture to a boil. Reduce the heat to low and simmer for 30-40 minutes or until the chicken is cooked through and the vegetables are tender.

Stir in the corn starch mixture and cook for an additional 2-3 minutes or until the sauce thickens.

Turn off the heat and stir in the sliced green onions.

Serve the jjimdak over rice and garnish with sesame seeds, if desired.

You can adjust the ingredients to change the taste, for example if you want it less sweet, use less brown sugar, or if you want it more spicy, add some red pepper flakes or gochugaru. you can also add more vegetables to make it healthy like broccoli, bell peppers, or zucchini. Some people also like to add some glass noodles (dangmyeon) to the dish which makes it even more hearty.
