Paella on the Beach. Honorable Mention in A Taste of Home Challenge.
I don’t remember much about my paternal grandmother other than her cupcakes. Bound up in tinfoil wrappers, they always had badly burned bottoms, which amassed on a plate every holiday as the family ate around the carbon char. Partially incinerated cupcakes remain my most enduring memory of her.

My Mom's Picadillo
One of the things I hate most about recipes online is the long story that comes before it. The entire history of where the ingredients for a butter cake come from, the author’s entire food-on-the-road blog, or everything that’s happened in the world since it was formed. A lot of advertisements floating around the sides or in between the text. Then follows the general ingredients, and more dialogue. A few photos. THEN you get the recipe measures and directions. If you want the recipe, skip right to the end below. I promise not to tattle on you.

Chicken Soup with Rice
When I was a little kid, my mother would always get these books for the children to read. This is why I love to read and write now. We had Dr. Seuss books, Little Golden Books, and Sweet Pickel books. My brothers and I would love to get the Sweet Pickel books. The back inside cover would display a map of the fictional town of Sweet Pickels. One of the houses on the map was red and blue. It slightly resembled our house which was red and blue. I don’t remember any of the stories, but that house was enough for us to love the books.

Poor Man's Prime Rib Is So Juicy And Garlicky Good You'll Never Know It's Not Expensive
I don’t know many people who don’t absolutely love a good prime rib. The rich, beefy flavor, the perfect pink center, and that savory, crispy crust—it’s a meal that feels like pure indulgence. But let’s be real: prime rib is expensive, and not everyone can justify spending that kind of money, even on special occasions. That’s where this poor man’s prime rib comes in. It’s an incredible alternative that will surprise you—not only is it easy to make, but it also tastes remarkably close to the real thing at a fraction of the price. The secret lies in the rub and the cooking method. Your house will smell amazing while it roasts, and when you finally carve into it, you’ll be rewarded with a beautifully pink center and a flavorful crust that rivals any high-end steakhouse. Simply divine!
