If you do decide to purchase any store-bought keto ice cream, make sure the nutrition label is clear. The crucial information needed here are Total Carbohydrate then Net Carbs and of course read all the Ingredients list like a detective! It is ok to do this, and some brands will even list fiber separately (because net carbs are calculated as total carbohydrates minus dietary fiber) or sugar alcohols that also won't affect blood-glucose much if not at all.

Keto Ice Cream: Two Recipes to Make at Home

For those making their own ice cream, there are many simple keto recipes that you can customize for your favorite flavor*s*. Some simple recipes to get you started:

1. Basic Keto Vanilla Ice Cream

Ingredients:

2 cups heavy cream

1 cup unsweetened almond milk

1/2 cup of choice low-carb sweetener (I used erythritol)

1 tablespoon vanilla extract

Instructions:

Add all the ingredients in a large bowl and whisk them until your sweetener is completely dissolved.

Ingredients:

1/2 cup of cream cheese, softened

1 tablespoon lemon juice

1 teaspoon vanilla extract

Instructions:

Blend together in blender whole strawberries, cream cheese (or yogurt), lemon juice and vanilla. Blend until smooth.

In another bowl, whisk the heavy cream, almond milk and erythritol until sweetener is dissolved.

Transfer the strawberry mixture into the cream and stir well to combine.

Transfer the mixture to an ice cream maker; follow manufacturer's directions.

Freeze 1-2 hours longer or until desired firmness, transferring to a container.

Top and taste the second dessert, add fruity cream flavor!

Tips for Making Keto Ice Cream
