The Modern Day Vegetarian
My Story Since early 2019 pre covid I have been on a journey of varying diets. Finding out what does and doesn't work for me, and I am going to share with you my story. Everyone's reason for cutting out meat and dairy or putting meat and dairy back in their diets are different. Personally I have more than a single reason, and I don't think I could ever go back! In fact I would personally recommend vegetarianism and veganism to anyone, but of course people love their dairy and meat, and I don't blame them.

“I’ve never had one of these before!” I remark aloud, staring at the perfect, delicious, brightly-colored donuts sitting in a box in front of me. “You’ve never had a donut?!” I could hear multiple tones blended in her retort; surprise, bewilderment, mockery, entitlement. I felt shame wash over my body like one of those big waves that crash on top of me at the beach. I could tell me never having had a donut was seen as weird or different, maybe even a bit sad. I despised feeling like an outsider, even in small ways.

To Understand American Obesity, You Have To Understand American Poverty
During my ecogastronomy class, we discussed how the processing of food is contributing to obesity in the US. In this discussion, the Whole30 diet came up. The Whole30 diet encourages eating only whole foods which means no processed foods and sugar (real or artificial), dairy, legumes, and sweets of any kind. While we didn't discuss the specifics, someone in class said, "How is that a diet?!" Other students were similarly surprised that many people don't eat only organic produce or the fact that at least one third of our university’s campus suffered from food insecurity.
