This Easy Sugar-Free, Gluten-Free Blackberry Cobbler Recipe Will Stun Your Taste Buds

Wild blackberries are abundant here in the Pacific Northwest and are in full swing berry picking time. I'll share how I make this easy and amazing-tasting sugar-free, gluten-free blackberry cobbler recipe that you will love.

I love it when we can find great-tasting desserts that are fairly healthy and delicious too. So many people are eating in ways that are more health-conscious and want to eliminate sugar and/or gluten. Or perhaps there are health challenges someone is facing that require those changes, like Celiac disease or Diabetes.

I use freshly picked wild blackberries for this recipe, but frozen blackberries can be used as well. I would think you could also substitute other types of berries if you had them as well.

Sugar-Free, Gluten-Free Blackberry Cobbler Recipe

Ingredients

  • 8 cups of blackberries
  • 4 T. lemon juice
  • 8 T. Tapioca (the dry form)
  • 2 t. liquid monk fruit sweetener
  • 1/2 c. almond flour
  • 1/2 c. coconut flour
  • 1/2 c. Ancient grains gluten-free flour
  • 1/2 c. Xylitol (a naturally occurring birch sugar alcohol with low glycemic impact and good at fighting cavities as well)
  • 3/4 t. baking powder
  • 1/2 t. salt
  • 3/4 c. melted butter
  • 1 t. vanilla

Directions:

Put the first 4 ingredients in a large pan and gently toss to mix.

In a separate bowl, stir together the remaining ingredients. When fully mixed, spoon on top of the berry mixture.

Bake at 350° F. for 20–25 minutes until the tops in gently golden. Cool then serve.

Serving the blackberry cobbler

You can either serve it hot or cold, as is.

Or make homemade sugar-free whipped cream. To do this get a whipped cream dispenser and make it using a blend of heavy cream, vanilla extract, and liquid monkfruit to taste, charge the dispenser, and use it on the cobbler. 

There are also low-carb ice creams that can be found out there too, but make sure the ingredients stay in line with your eating preferences.

This year the berry picking has been a little nerve wracking for me, however. We have at least 5 known black bears who have recently taken up residence around the house.

One is a mama bear with a larger cub with her, another mama bear with two little cubs (so cute!) with her, and probably the lone daddy bear.

Last year I saw the lone dad bear when he was an older teen bear (I'm guessing), and had to nearly shoo him off the porch. In this recent week, he's been back to decimate the bird feeder and clean it out of sunflower seeds. We've learned sunflower seeds are a favorite of theirs, that they can't resist.

So, while I'm out picking these blackberries, I'm making as much noise as possible, yelling out to the bears in case they are within earshot while having my bear spray in my pocket. Not exactly the most relaxing berry-picking time. Fortunately, there were no incidents.

Berry picking safety tips

You might not think there is any such thing as safety awareness when berry picking, but here are a few to reduce unpleasant incidents.

Wear long sleeves, even just a light-weight long-sleeved Tshirt will do, but it will help prevent scratches and thorns from engaging into your skin.

Wear gloves, which will again protect your hands and fingers from thorns and scratches. This will also help protect you if you accidentally reach for a berry that has a wasp sitting on it. I have seen wasps and bees digging into berries before.

Wear a sun hat or baseball cap to protect your head and shield your eyes from the sun. It will also help protect your skin from the sun and catch any sweat that may want to run down your face. This is something I hate when berry picking and my hands are full of berry juice!

Beware of possible bears, but also snakes or other critters. Be mindful of any potential traffic if you are picking berries beside a road.

Stay hydrated, bring lots of water drink plenty.
