The Ultimate Guide to Making Restaurant-Quality Banana Cream Pie

The only banana cream pie recipe you'll ever need

By Val GarnerPublished about a year ago Updated about a year ago 3 min read

I'll share my son's favorite dessert recipe of all time. This is a decadent banana cream pie recipe with toasted coconut pie crust. This one isn't the same old banana pie recipe you've seen hundreds of times. This one will leave guests wanting more, causing their mouths to water as they remember it.

Usually, I post healthy recipes, but occasionally I'll write a couple that aren't, and this falls into that category. But for those that aren't, they need to be TRULY special. After all, when living a healthy lifestyle, on a rare occasion you need to break the rules (unless health concerns dictate that you can't) and indulge in something worthy of that rare break.

Decadent and Rich Banana Cream Pie Recipe

Ingredients

  • 2 cups shredded coconut
  • 1 cube of butter
  • 1 3/4 oz package of Jello brand vanilla or banana instant pudding
  • 1 3/4 c. milk
  • 1/2 c. heavy cream
  • 1 1/2 c. mini marshmallows
  • 2 bananas

To make the crust, put the coconut and butter in a skillet and cook over low heat, stirring constantly, until the coconut is a tan, toasty color.

Remove from heat and put this in a 9-inch pie pan, using a fork to press it up the sides and around the bottom. Then place in the refrigerator to chill.

Directions for the banana cream pie

In a bowl, blend with a mixer the instant vanilla or banana pudding and the milk. Mix for 2 minutes, cover with wax paper, and chill.

In another bowl, pour the heavy cream and using clean beaters, mix until the cream forms stiff peaks. Gently fold the marshmallows into the whipped cream.

Slice the bananas and place them in the cooled pie crust.

Gently fold the whipped cream mix and the pudding together then spread over the bananas in the pie crust.

Chill for a few hours before serving.

A side story about this recipe. I got it from my best friend several decades ago and used to make it for my family when my children were young.

For years, my ex-husband used to say I was a bad cook, and these comments influenced my sons' belief that everything I made was terrible. It got so bad that in their teen years, I went on strike and told my ex that he could take over cooking, and boys could fend for themselves if they didn't like it.

After 28 years of marriage, it ended. After so many years of hearing this, I had come to believe I was a bad cook. How often do we believe lies from others' opinions?

After being on my own and needing to change to way I eat to a very healthy lifestyle, I began to see that my cooking was actually indeed good. I had to get creative in making healthy foods, and served it to friends who told me the foods were delicious. I'm now a creative cook and enjoy it.

Recently, my boyfriend asked my youngest son what his favorite food was. He was about 35 years old at the time, and he admitted this banana cream pie was his favorite of all time, and that he had searched high and low at stores, restaurants, and bakeries to find one like this, but never did.

He never confessed to me about this and I never knew until recently. I guess it must have been too close to having to eat humble pie. I secretly giggle about this now, my heart warm with knowing how much he did enjoy this pie. I now make him one for the holidays and his birthday.

I'd love to hear from you if you make this and how it turned out for you.
