Okay, we’ve all been there looking up things like How to roast Asparagus or Healthy Desserts and the stories that come with something so simple turns out to be so tedious and full of lies. Nobody cares that you lived on a farm and your son is a fussy eater or the fact that you were backpacking through Europe and this beautiful Italian woman looked at you with all sensual lust in her eyes that eating chocolate may have been the only way to get her attention and now surprisingly have been married for thirty-five years. Come on, I am trying to learn a new recipe and not be fed your thrown of lies and empty calories.

No Lack For Jack
At the beginning, of the Pandumbpanic, a bunch of friends vowed that no matter what transpired, we would stay on our diets, sleek and fit, and keep our respective groups safe and happy. Ten of us buddies, set out to have enough food in every nook and cranny of our living spaces. That was so that we could make great dinners with several families living together, and trade when necessary. The crie de jere in the beginning was to store superfluous amounts of cans and dry goods in cabinets, under the beds, in the garage and in my stomach.

Alternative Baking: Vegan AND Soy-Free
In the blue corner we have our reigning champion, SOY! In the red corner, is me, the fighter always on alert and ready to battle against my arch nemesis soy intolerance. It is the lone ingredient standing between myself and veganism, and I'm sure I'm not the only one stuck in this constant battle. Soy is a major ingredient in most vegetable oils, dairy-free milks, vegan butters, and as a valuable protein ingredient in the vegan diet. This can complicate enjoying wholesome sweet treats and baked goods for those of us with intolerances tremendously. After all, there are only so many frozen berry pops and fruit salads one can eat and still enjoy. Occasionally, you crave a slice of banana bread or pastry. When most of the major products you find on your shelf all contain an ingredient your body can't tolerate or alternatively animal by-products, what can you do?

Strawberry Banana Bread
VEGAN, GLUTEN FREE (GF) STRAWBERRY BANANA BREAD I love to bake, and during lockdown I made it my GF mission to bake tasty, healthy, vegan, GF, desserts. One of my new inventions was my Strawberry, Banana Bread. My dad usually can’t eat strawberries, yet because I cut them so finely they didn’t upset his stomach at all! Everyone in my family loves this bread, and I may have the fussiest family ever for eating food. As always, I want to give credit where credit is due. I find multiple recipes on Pinterest, and then I twist them into my own recipes and concoctions! I also don’t use regular teaspoon, tablespoon measurements, and instead always use dessert spoons, and serving spoons … and I use the splash, dash metric for extracts, spices and herbs.

Four Peachy-keen Vegan Desserts
When my friend, Patti, came to visit for a week; she brought along a basket brimming over with lovely Georgia peaches, as a gift. They were the kind of delicious peaches where the juice runs down your chin when you bite into one... Before Patti visited, the most cooking I'd done with peaches was to throw them onto the grill with pineapple slices; or to toss a peach into the blender as a change-of-pace for a smoothie (both of which I still love, by the way). But, by the time Patti taught me how to prepare peaches in every imaginable way that week; each was so delectable I found myself wondering out loud, "You know, the scriptures don't specify WHICH fruit Adam & Eve were tempted by... I wonder if it was actually a peach, instead of an apple?" Patti just laughed, as together we cleaned up after another delightful dessert. (Don't you just love guests who cook and clean?)
