My Dad's Potato Salad
My family, at least on my Dads side, came from German and Welsh decent. My Grandfather made this potato salad that was, by today's standards, kind of plain, if you will. He never recorded the recipe. So my Dad carried it on through the years. He never wrote it down, either, but we still make it today! This will be the first time this recipe has ever been recorded in any way so, Yippee!

Easiest Pumpkin Bread
It's that time of year that everyone loves to make sweet treats, this time of year is always my favorite! When I was young my mother would always make desserts that would fill the house with fall smells and it was always my favorite time of the season. When I grew up and moved out, I found it is a little difficult to find ingredients when you are a broke college student, but I would still try to find something to make my apartment feel like fall.

My Hobo Fajitas
Traditionally, you would use skirt steak and grill it. But, sometimes "skirt steak", as I like to call it, is a little pricey. So, I have been known to use round steak. Yes, it's not a typo, I said "Round Steak". Be sure to get a nice round steak that, when cut into strips, will feed at least five people and then build your menu from there for more people if needed.

Tomato Soup Meatloaf
When I was in my "tween" years, this was a special favorite of mine in the fall; it usually meant meatloaf sandwiches for lunch the next day! Somehow, it tasted all the more special the next day at school because everyone in the cafeteria wanted to know what you were eating.

Perfect Pineapple Upside Down Cake
My children grew up around a lot of church functions, dinners, and fellowships. This cake was one of my "go-to" recipes whenever I had to bring a dessert for a big crowd. Even though I was not the only one bringing a dessert, this was always the first to go.

Best Hominy Dish
Changing what you put into your diet can help you achieve a healthy lifestyle. Healing Through Food What changes make a difference in a total healthy lifestyle? Most would say diet, exercise, and a stress-free itinerary. These are some of the steps that begin the process (when you start to get some motivation about yourself to do them), but changing what you put into your diet, exercise, and itinerary is the big kicker. Just as everyone else, I began to research different sources for the best answers, which I do incorporate into my current regimen. There are many suggestions to be sought after, yet I know there is a deeper connection in selecting the right one that best fits. Some call it the cellular level, though I know it taps into a spiritual aspect, whether you want to believe it or not.

"Spiced Nuts"
The holidays are just around the corner. This family favorite always brought a warm smile to everyone in my family and get togethers! Sitting around the Christmas tree or fireplace munching on this treat with a cup of hot cider or glass of red wine, it just doesn't get any better than this. It's a great conversation starter and so easy to make. This tradition started when my oldest daughter was a toddler. We were having a Christmas fellowship at our church and I was called at the last minute to bring a little something to snack on during a Christmas movie that they were putting on for the kids. Well, they caught me off guard I had no popcorn, which was always my go to, or anything else because I hadn't even been to the store because I was busy with all the Christmas hubbub. So, I had about a pound of pecans, cinnamon, eggs and sugar so viola! A family tradition was born. Everyone loved it. Hope your family will too. You can double and even triple the recipe to suit your needs.

Recapturing Childhood Through Sopapillas
Some of my fondest childhood memories surround family birthdays spent at our local Poncho's restaurant. They are memories of light filtered through glass sun-catchers, and of over-sized sombreros perched above smiling faces. They memories of small children clutching piñatas carefully selected from its perch on the wall dividers throughout the restaurant; a piñata that inevitably hung from a bedroom ceiling until it fell to pieces. Above all, they are memories full of delicious Mexican food which included my personal favorite: fresh sopapillas with honey.
