Creamy Tomato Pasta with Steak
Hello my little lovelies! So today I have a simple recipe for you that you can essentially make into anything you like. I've been using this recipe years but I've tweaked it a little bit to make it slightly healthier since I'm trying to eat healthier. I normally add 1/4 cup of heavy cream to make it richer and creamier but for this recipe I used coconut milk. The tomato is so strong you don't even taste the coconut and it is absolutely delicious! Now for this I put in black beans and corn but you don't have to I just like the combo a lot. I also put steak in this for protein but you can add whatever protein source you want. If you're vegan you can just make the sauce itself and just put in the pasta. Meat or no meat this sauce is delicious! This dish can also handle some heat so if you want to spice it up, add some red pepper flakes to the sauce to finish it or add chili pepper when you cook the onions and garlic. Now with the coconut milk in the sauce it should even out the acidity of the tomato sauce but if you like a sweet sauce, add in a couple tablespoons of sugar. I used to do that but I've cut a lot of sugar out of my diet.

Mixed Berry Tea Cupcakes are my own creation and consist of a very sweet Tea flavor that is incorporated into both the sponge and the frosting. These cupcakes are delicious and scrumptious at the same time and will leave you tempted into wanting some more. These freshly baked cupcakes are also perfect for special occasions such as baby showers or birthday parties as the frosting is naturally purple so it can tie in well with the themed occasion. So there is no need for food coloring. This recipe makes 10-12 cupcakes but you can double the quantity needed for the ingredients to make 20-24 cupcakes.

Let’s get some back story. I have been cooking and researching most my life—I did learn from my grandmother and mother. Strong women in my life who had large families and hungry teens. This particular recipe my aunt found on Pinterest and I didn’t really like... so I altered it and found this version above works better and is always a hit. Almond Joy Cookies
I love chocolate, I love candy bars, and I love cookies! But, most of all I love easy to make cookies hot out of the oven. I admit that I am really pretty lazy when it comes to baking. I don't get that trait from my mom. I remember her bustling around in her apron mixing and sifting. I am a child of the 50s so a lot of what we take for granted these days in terms of ease of baking simply did not exist as yet.

Healthy Chicken Fried Rice
Hello my little lovelies! So I know I've been lagging a little bit but I promise you posts are coming. As soon as I get into a routine with work and the gym I'll be much better at it, I promise. Things have been a little hectic with work, then trying to fit in the gym and trying to develop a routine so that I'm not constantly crying my eyes out because my husband isn't here to calm me down if I've had a bad day. So with that being said, I'll be posting from now on Mondays and Fridays, still have to establish a time and make sure it coincides with my break at work so I can be consistent with posting times. So just hang on tight!
