Congee
At this current point in time I am unemployed and so therefore don't have the greatest income coming through. Whilst I am thankful for my centrelink payments, they are still very much a struggle to live off. Now trust me, I know that the payments aren't there to make you comfortable and all that capitalist ideology. However, I also know from first hand experience how hard it is to currently find a job, especially where I'm living. In this day and age everything requires a piece of paper to say how good you are and that almost always means that without said piece of paper you're not even given the time of day to physically show the skills you have. I'm currently 22 years of age and have 2 years worth of experience as an Assistant in Nursing and Endoscope reprocessor. The latter of which is an occupation that not many people can say they have the skills and knowledge for. Now when I was 20, before I acquircd those jobs, I was studying my Cert III in Health Services Assistance, to which I attended every class and excelled in all the practical work. I never finished said course because I never completed my written work and would get easily overwhelmed and frustrated when doing my online quizzes. These struggles and more are currently contributing to my growing suspicions that I have undiagnosed ADHD. The only reason I managed to get those jobs is because of another common factor to how people get jobs these days; I knew someone. This person was my first boss, and she was extremely loved by the entire clinic. I'm still grateful to this day for being given such amazing opportunity to be able to work where I did.

Pâte Sucrée, Whipped Mascarpone, and Raspberry Coulis
When you create any dish you need to consider its sweetness, acidity, fat content, and texture. When you create a cookie, you need to consider all of these things and multiple them by 100. After all, there isn’t tons of salt, smoke, umami, or bitterness to hide behind.

Christmas Sugar Cookie Mayhem
Traditions play a big role in every culture. Some traditions may fade over time, but there are others that we hold onto for dear life. For me, and many others, Christmas traditions are some of the most cherished. However, not all traditions are old traditions, some get added later on, but that doesn't make them any less important. One recent tradition for my family is the making, cutting out, baking, and decorating of Christmas Sugar Cookies. Not only are these the best sugar cookies that I've ever had, so good you don't even need icing, that have just the right amount of crunch, but I also gained one of my favorite memories from this new tradition.

THE BEST ITALIAN/GREEK COOKIES YOU WILL EAT
I have had a love for these cookies and everyone I bake these cookies for loves eating them. I have been baking cookies at an early age when I was in the Four H Club. My mom and my aunt taught me how to bake. I was taught everything about baking at a very early age. My mom is Italian and they teach their children at an early age to bake and cook. It is one of the privileges that I know how to do thanks to my mom. When Christmas comes I bake up a storm with my daughter. We have a great time baking, talking, and eating the cookies. Life could not be better than knowing how to bake cookies and give them as gifts in a nice container. Last year I and my daughter baked these cookies and we had a great time together. We also baked other cookies and gave them to our friends and relatives. We put them in fancy containers and we put a bow around it. Our family and friends were happy to have them as a Christmas gift.

Reindeer Poop Cookies
My favorite part of making Christmas goodies is to plop the reindeer poops right next to the gingerbread cookies. My Dad and I love to make them together. He will always pull the recipe out of an old cookie tin to make for Santa. Here is the recipe for these oatmeal drop cookies that are no bake and just dry on wax paper:

Granny Jones' Classic Oatmeal Raisin Cookies
This Classic Recipe from my granny Jones was always a welcome surprise when I would go to her house to muck her 2 large chicken coops in southern Oklahoma. I actually couldn’t stand raisins cooked in any dish( a texture thing I suppose) but when she raised her kitchen windows to let the air cool of the house after baking these rough round delicacies, the raisins added to the aroma of the cookie dough and was carried by the breeze all the way out to the coops; so strong was the aroma , the smell of the mucking was forgotten, and I dug in and worked even harder, anticipating eating them with a fresh glass of milk. Yes! , Milk cows in the barn across the road at Aunt Gerties, I didn’t waste any time. As soon as I laid fresh straw down, I immediately jumped on my bike and rode over to aunt Gerties to get a gallon of fresh milk. I ran in excitedly “Gertie I need to milk a cow, Granny has fresh cookies made,” Ok “she said,” I reckon they are ready to be milked”. I lined 2 cows up I thought looked full, Of course I had my favorites. When you grow up on farms and milk cows, you get to where you know exactly which cow, you are drinking milk from. I cleaned off the teats and started milking, occasionally scratching just inside the pit of her leg, the milk seemed to flow easier as I tugged on her. A little bend up to squirt a mouthful up to me as a bonus, she would not mind. After I finished milking, I carried the buckets up to Gertie so she could transfer them to gallon jars. Usually a gallon was a dollar with a jar returned, But I milked the cows and got my gallon free! Man! I could not wait I put the gallon jar in the basket on the back of my bike. Gertie would always give me an old flower sack to wrap around it so the bouncing wouldn’t crack her jars. I was a speed demon getting to those fresh cookies. I would ride back, pull up to the back gate, grab the jar of milk and run inside the back door. Granny with her big smile. “Where did you go? “Granny I could smell those cookies out there in the coop I was cleaning and I didn’t want to take the chance of you being out of milk, so I rode over to Gerties and milked her cows and got a free gallon of milk! “I replied. Then like magic she opened the oven door and pulled out this huge stack of cookies, She placed them right in front of me and tossed me the flower sack in case I needed to wipe the milk of my face, then a big glass of warm 1000%whole milk! I was standing in high cotton! I thought the world was mine and it was, according to granny. I sorted out the raisins in my mouth then sucked the juice out of them before chewing them up. I was not about to tell Granny I did not want raisins. Beggars cannot be choosers. Right!
