Baking Cookies for the Holidays
When my sister, Mariana and I were in elementary school, we loved to read. We often ordered books from the Scholastic Book Club in those days. We ordered all kinds of books from kids' mystery books, Beverly Cleary books, and fun how-to books. One of our favorites was The Cookie Book by Eva Moore. The book had twelve cookie recipes, one for every month. It featured snickerdoodles, tiny timmies, peanut butter cookies, chocolate chip brownies,Christmas cookies, and even three-color sugar cookies for the Fourth of July.

Simple Peanut Butter Cookies
I can remember when my children were small how much they enjoyed it when I would get out the mixing bowls and wooden spoons. Oh, how their little faces would light right up, knowing that their mommy was getting ready to bake something tasty. I recall those days as some of my fondest kitchen memories. Little ones were tugging on my shirt, asking when the treats will be ready or one of the girls dragging a chair over to the counter and climbing up for an eye level view.

The Best Little Cookies in the 4 Corner States
Biscochitos (sometimes written Bizcochitos): flaky, buttery, dusted with cinnamon sugar goodness and just the right amount of spice! If you've never tried these golden treasures...you're not alone, but you're missing out. These shortbread-like cookies are a well-kept, secret New Mexican staple. They are so delicious in fact, that they were named the official state cookie! If you live outside of the US four-corner states, it's likely you've never even heard the name biscochito, so I'll tell you in advance: you're welcome! Easy to make, and sure to please! Once you make these beauties for your friends and family, they'll be asking for them every holiday. Just be careful, or your family may dub you the official holiday baker.
