Vegan Tuna Salad
Rumor has it we are going back to the office soon and that brings me memories of the office's lunchroom and the smelly lunches my coworkers and me so much enjoy (not): The dreaded microwaveable garlicky leftovers, the awful boiled eggs with salad, and the worst of all: tuna and it's variations. Just thinking of the smell has me hoping I was quarantined all over again.

I grew up in India, and chai is a staple diet. We have chai in these cute tiny steel tumblers three times a day. Making proper chai involves freshly grated ginger, cardamom, cloves and a few cinnamon sticks. When I decided to go vegan, the hardest thing to give up was diary just because of chai. I had no issues giving up cookies/cakes or ice cream, but I had trepidation when it came to chai. For the longest time, I was vegan except for a cup of chai.

Easy peasy banana cake!
When I was growing up as a child in my family home, I was brought up to be vegetarian. Vegan food was also commonly incorporated into our diets a lot too (although we were all big cheese lovers so couldn't fully commit!). Being vegan boasts so many benefits, both environmentally and of course for our health. A really great idea you can bring into your family if you aren't willing to declare yourself a vegan, is by having a few days a month dedicated to it! You might learn to love it, and realize just how delicious it can be, and that it isn't all rabbit food! My family have "vegan Monday" every week , which I'm hoping to gradually increase over time. It's a great start, and so much opportunity to find and try new yummy recipes! A favourite of mine is my mum's banana cake. Despite it being sooo delicious and quick to make, the recipe is so very simple! Worth a try right?! The ingredients are commonly found in your kitchen already, prep time is just 5/10 mins. Because it's so simple, its firm favourite to bake with children too! Banana cake is perfect for old bananas that have gone really soft. A bonus in my house, if you have children like mine who decide 1 week they love banana's and demolish a whole bunch in an afteroon.. then the next they could all be sat untouched for days until they are turning black (typical!).

Light Coconut Cake
Ever since my mother and I won a cake baking contest in her unassisted living facility. This light coconut cake with pineapple filling and cream cheese frosting has been our favorite. I call it light coconut cake because I do not like chewing on coconut shreds so the coconut flavor is not strong in this recipe. If you love shredded coconut please by all means add it to the frosting and it will increase the coconut flavor. I just learned how to make it into a vegan recipe by changing the butter, sugar, and egg whites. Which I am excited to share with you. I hope you enjoy it as much as we have.

Versatile Vegan Scones
I love scones. I miss scones. Scones are the perfect treat - not quite a cookie, not quite a muffin. A slightly crunchy outside with a denser, yet tender inside; mildly sweetened and ideal with your cup of coffee. Mmm, so good! But long gone are the days where I could walk into a coffee shop and grab a scone on my way to work with a strong cappuccino.

Pride-Full Bagels
A burst of color unexpected, I got this idea from the Great British Baking Show! In California, I worked for a company that specialized in care for individuals with intellectual and physical disabilities. The client that I worked with loved to bake, I would supervise my client while they baked. Occasionally, we would play bake with a Play-Doh baking set. I wanted to connect more with my client, I know that I loved to bake as well and thought, hmm? What can we do together that would be exciting? One day while we were watching TV, I turned on Netflix and put on the Great British Baking Show. We saw the most amazing, creative, and simple dish. It was a rainbow bagel! Both captivated by the art, I made a promise to recreate this dish and share my results! This was around Halloween, and I lived in a student artist housing facility. My house had 24 members at the time. I love to cook, and almost every holiday, I would host a party with one other roommate of mine. She and I would make a stunning menu for our house members, and Halloween would be our biggest yet. It would require a lot of work, considering the tediousness of making a rainbow bagel and the amount needed to supply a party. I had waited for what seemed like forever to create this astonishing creation. Here's the twist, a number of my housemates just happened to be vegan. Uh oh! I looked up vegan bagel recipes and you know, bagels aren't bagels without the cream cheese. A majority of the menu wasn't vegan and I wanted to incorporate some items that way everyone could participate. This would be a challenge, but I was up for it. When I was finished, it was worth all of the craziness!
