I first had this bizarre and particular dish in the midst of a Depressive stage. My stepfather, a man who fluctuates from easygoing and fun to be around, to hackle raising and stressful, made this after drinking several tall cans of Mike’s Twisted Tea. I usually hate being around him when he drinks, as he targets me and berates me for random reasons throughout the night. But tonight, he was tolerable to be around.

I was in my 36th year of life and had returned to college to finish up the university degree that had been interrupted by a pregnancy and marriage while I was in my teens. My children were now teenagers and I felt I could finally put some effort towards bettering myself. It wasn’t an easy decision. I was married to an extremely jealous man who had clearly demonstrated that neither me nor the children were safe when his rage overtook him. This had led to my developing coping skills over time, skills that had very little to do with who I was an individual and much to do with keeping us all safe. I didn’t like the person I had become and I missed the one I had been as a child. I knew I could not continue living like I was. Returning to college was the first step in a journey to reclaim my self.

A Gift For Friends And Family
This was an easy choice for the first-anniversary memorial of my mother's death. Family will often give away the deceased person's belongings and everyone knew my mother was an excellent cook and baker. There were always a lot of comments about her pies.

When it comes to eating meat, I stopped 40 years ago in 1983. I recall the last meaty meal I ate, mostly because it was a mistake, an oversight. Invited to dinner with some work friends I had neglected to tell them that I was a vegetarian. Completely forgot to say, that is, until a big bowl of steaming spag bol was placed in front of me. Appealing as it was, it seemed, to all the other guests, I had to steel myself to tackle it.

Family Favourite Christmas Cookies
I don't remember exactly what year the 12 Cookies of Christmas tradition began, but I do remember what kicked it off. We still got our provincial newspaper every day at the time, and one day in November there was an insert tucked in between the folds. This insert was filled with recipes and pictures of beautifully decorated Christmas cookies, and my dad took it and ran with it. Determined to make 12 kinds of cookies for our family before the holidays were over, he pulled both from that newspaper insert and from the various recipes he had collected over the years. As far bake as I can remember, my dad has loved to bake things and loved Christmas. This challenge that blended the two was perfect for him. Since I also loved Christmas and loved to help him bake, I guess it was perfect for me too.

Thinking back on all the beautiful dishes I’ve had throughout my life, I could write about chicken and dressing, tamales, pumpkin pie, or many other entrees I have had. Fancy dishes that would have your mouth watering like crazy. Instead, I will write about a simple, plain chocolate cake made for me with so much love.
