A spooktacular Halloween Feast with a twist!
This week on Eating Through the Alphabet, things took a spooky turn for the letter H! During Thursday's episode, The Hendersons were taken over by witch Zenith and warlock Pilitar (don't ask where his name came from). And their little dog, Teddy, was turned into a cat named Catrick!

Pumpkin Pancakes
It is amazing what ideas you get when you binge watch the Great British Bake Off on Netflix. I always associate pumpkins with Halloween. When I started travelling, I began to see Pumpkins in a new light. I had childhood memories of carving pumpkins, but never actually tasted one before. “Maybe we’ll have some pumpkin pie” whistles on the radio. The lyrics from Walking Around the Christmas Tree felt weird to me when I was younger because I would always associate pumpkins with Halloween. Now I’m a fan. It’s not just Pumpkin Spice Lattes that should have all the glory. Pumpkin is a really good thing to have in any cuisine. The pumpkin salad I had at a hotel in Japan, was one of the best salads I ever had in my life. Pumpkin curry works a treat. Pumpkin pie is lush. Having been a big fan of the sweet potato pancakes from Korea, I decided to try and make some myself at home. It worked out really well, so I thought maybe try pumpkin ones too.

My mom used to always say that if she could have cheese and crackers for dinner every night, she would be the happiest woman alive. Clearly, I didn't have my priorities straight back then because I distinctly remember thinking, Wow, that sounds seriously boring, but also wanting to be cool so I just replied, "Oh, yeah, that sounds good" in what you can assume was in a very monotone-like voice.

If Mexican cornbread was a spirit animal. Let me start of by saying that this is definitely not your mothers or grandmother’s cornbread! When I was first introduced to this cornbread I was only five years old. Now if I’m being honest, I wasn’t quite fond of the cornbread back then, and I believe because my father made it. Also, I had only had ever had it that one time, before I decided to recreate myself. You’re probably wondering, well If you weren’t fond of the recipe back then, how could you possibly have a taste for it? I’m just as perplexed as you are, however it was something about cornbread and chili beans that I was craving. I thought long and hard and for some reason that memory of that recipe came to mind.

Chocolate Mini Muffins With Vanilla Cream Cheese Frosting
Chocolate mini muffins with cream cheese frosting Makes 16 This one was a fun one! The inspiration was actually my grandma, she has been having difficulty with her intake, she’s had some oral health issues and unfortunately her favorite foods are Reeses, ice cream and pizza...So not a lot of fiber. It’s hard to convince her to eat anything that isn’t sweet! She says, “I’m an old lady, I’m going to eat the things I like!”. So far she loves pita pizzas so I make her those and bring them, but it’s definitely not enough. Unsurprisingly, with very little fiber constipation has become an issue so we had to get a little creative on how to make sweets with some fiber content. (Luckily apart from pita pizzas, ice cream and Reeses lately she’s been willing to work with us and drink 2-3 Ensures /Boosts/ protein shakes per day, which helps with vitamins, minerals and protein but does nothing for the fiber issue!)
