Caramel Apples For Any Season
What’s some food you look forward to the most when the fair comes around? Cotton candy, funnel cake, deep fried greasy goodies - and caramel and candied apples. But some things are just too good to wait for the fair- and why wait when you can have a blast making some things yourself?

Cucina Antica Tomato Sauce Brings Sunday Dinner Home at My House
Photo by Tony Growing up, Sunday meant macaroni and meatballs and represented a nearly religious ritual that Church could never supplant. In fact, when my mother did occasionally stray from doctrine, she—at best—was greeted with some very quizzical glances at two in the afternoon. That said, sauce in a jar could have easily led to her excommunication, and no council of cardinals would have been required. So I was skeptical about doing a profile of a locally and ready made sauce called Cecina Antica. But it also presented the chance to restore my sauce-less Sunday’s to their sacred place.

Enjoy the State Fair
Alabama Oak Mountain State Fair in Pelham, Alabama will be held from April 21 – 23, 2023. The fair is known for its live music and great family atmosphere. The Mi Pueblo food stand has become especially popular for its esquites, a creamy corn salad, tacos, and tamales. The tamales are what attract most people. They are prepared with a homemade masa wrapped around a filling consisting of shredded pork with red salsa or shredded chicken with tomatillo salsa. The tamales are assembled in individual corn husks, then stacked and steamed in a large pot for two hours and served warm. You just peel back the husk and add toppings like mild salsa, sour cream, and guacamole.

"It is the unofficial official dish of Canada. In fact, if they could make it look good on a flag, the maple leafs days might be numbered," Jamie Oliver quipped in an article about making the perfect poutine. As harmless as Oliver's comment appears, it's the perfect example of how a dish that stirs real feelings of heritage and culture in the Canadian province of Quebec may slowly be losing its regional identity.
