
What is special about Memoni Mutton Biriyani

Preparation of Memoni Mutton Biriyani
Ingredients:
• 2 cups basmati rice
• 1.5 kg mutton
• 4-5 cloves
• 2-3 black cardamom
• 4-5 green cardamom
• 4-5 bay leaves
• 2-3 cinnamon sticks
• 2-3 star anise
• 2-3 mace
• 1-2 tsp shahi jeera
• 1 tsp cumin seeds
• 2-3 onions
• 4-5 tomato
• 2-3 green chilli
• 2-3 ginger garlic paste
• 2-3 tsp red chilli powder
• 2-3 tsp coriander powder
• 2-3 tsp garam masala
• 2-3 tsp mutton masala
• 2-3 tsp biryani masala
• 2-3 tsp lemon juice
• 2-3 tsp yogurt
• Salt to taste
• 2-3 tsp ghee
• 2-3 tsp oil
• 1 cup fried onion
• 2-3 tsp chopped mint
• 2-3 tsp chopped coriander
• 2-3 tsp chopped green chilli
• 2-3 tsp chopped ginger
• 2-3 tsp chopped garlic
• 2-3 tsp chopped dry fruits
• 2-3 tsp saffron soaked in milk
• 2-3 tsp rose water
Instructions:
1. Wash the mutton and marinate it with yogurt, red chilli powder, coriander powder, garam masala, mutton masala, biryani masala, lemon juice, salt and ginger garlic paste.
2. Heat oil in a pressure cooker and add cloves, black cardamom, green cardamom, bay leaves, cinnamon sticks, star anise, mace, shahi jeera and cumin seeds.
3. Add onions and sauté till golden brown.
4. Add the marinated mutton and sauté for 5 minutes.
5. Add tomatoes, green chilli, ginger garlic paste and sauté for 2-3 minutes.
6. Add 2-3 cups of water and pressure cook for 5-7 whistles.
7. In a separate pan, heat ghee and add basmati rice and sauté for 2-3 minutes.
8. Add the cooked mutton, fried onions, chopped mint, chopped coriander, chopped green chilli, chopped ginger, chopped garlic, chopped dry fruits, saffron soaked in milk and rose water.
9. Simmer the flame and cook for 10 minutes.
10. Garnish with coriander leaves and serve hot.
