How to Bake Gourmet Chocolate Chip Cookies That Never Fail

So many chocolate chip cookie recipes claim to be the best tasting but turn out to be the same old cookie recipe.

Looking for something truly decadent and gourmet type, that will wow your friends and family and their taste buds?

Not too long ago, I made these cookies for a good friend. This friend is a self-proclaimed 'cookie snob and cookie expert'. When she had one of these, fresh out of the oven she said they were literally the BEST cookies she's ever had in her life. That's a high compliment coming from her.

She said I should seriously open a business baking and selling these cookies. She felt these would be a bigger hit than ever Mrs. Field's cookies. Dream on.

I was also so blessed when I gave my 16 year old grandson the choice of these cookies baked for him for Christmas, or he could come over to my place and bake them with me and take home as his gift. He chose to come over and bake with me! How many 16 year old boys would choose to bake chocolate chip cookies with their grandmas?

We had Christmas music playing, had a little fire going, joked and danced around the kitchen while baking. That day and his choice is something that will stay with me forever as one of my best memories.

Gourmet Chocolate Chip Cookie Recipe

Ingredients

  • 2 cups minus 2 Tbsp. cake flour
  • 1 2/3 cups bread flour
  • 1 ¼ tsp. baking soda
  • 1 ½ tsp. baking powder
  • 1 ½ tsp. salt
  • 2 ½ sticks (1 ¼ cups) unsalted butter, room temp
  • 1 ¼ cups light brown sugar
  • 1 cup plus 2 Tbsp. granulated sugar
  • 2 large eggs, room temp
  • 2 tsp. vanilla extract
  • 2 packages bittersweet chocolate chips or chunks, such as Ghirardelli
  • Sea salt or kosher salt for garnishing

Directions

Although you can bake these cookies right away at 350° F. for 15–20 minutes they are best if allowed to set in the refrigerator 24–36 hours before baking.

Alternatively, you could bake a sheet of them right away, then chill the remaining dough to bake more a day or two later. This recipe also freezes well.

In a bowl combine the dry ingredients and stir.

Using a heavy-duty mixer is best, as this dough will be very thick.

Blend the butter and sugars until light and fluffy, about 3- 5 minutes.

Add the eggs, one at a time, blending well in between additions. Add the vanilla and blend.

Next, stir the dry ingredients together in a separate bowl. Add the dry ingredients, blending until just mixed.

Fold in the chocolate chips. The dough will be very thick.

For best results, make large cookies (about 1/4 cup of dough per cookie), 6 to a cookie sheet.

Sprinkle a little sea salt on top of the individual cookies before baking.

Many times our cookie sheets are old and worn out. This might be a good time to replace them with a good-quality cookie sheet.

If you've never used parchment paper, now is the time to do so! It makes all the difference in the world!

When baking use parchment paper or a baking liner on your cookie sheet.

Bake 350° F. for 15–20 minutes When done, place the baking liner with the cookies, on top of wire cooling racks and allow to cool for about 15 minutes.

Then, remove them from the baking liner to cool completely on the wire racks.
