Easy Sultana Loaf Cake

A failsafe, foolproof fruitcake for people who don't like fruit cake.

I hate fruit cake. This one is not bad, though.

Ingredients

  • Sultanas, 1 cup
  • Milk, 1 cup
  • Self raising flour, 1.5 cups
  • Light soft brown sugar, 1 cup

Method

  1. Soak the sultanas in the milk for about 20-30 mins
  2. Hot up the oven good
  3. Mix in the rest of the ingredients
  4. Pour into a lined loaf tin
  5. Bake at 175C for about 40-50 mins
  6. I check at 40 and if the skewer comes out clean, it's done. Otherwise, bang it back in. The top should be slightly risen and a nice golden brown colour. Let it cool slightly before stuffing it in your face hole.

Can't remember where I originally found this one. It's one of those that has been scribbled on the side of my fridge since the dawn of time.

Adaptions:

  • You can chuck in a few glace cherries, or a handful of chocolate chips if you like. Ooh, fancy.
  • You can use raisins, or other dried fruit. I prefer sultanas though.
  • If you don't have any self raising, you can just add baking powder to plain flour.
  • If you don't have light soft brown sugar, then you can use normal white sugar, caster sugar, or golden caster sugar.

Serving:

  • Unlike revenge, best served warm!
  • It's nicest fresh from the oven, but you can also microwave a slice for a few seconds to warm it through.
  • Lovely with a thick layer of real butter on it. Actually, this is compulsory.
  • A good jam also works. Strawberry or cherry are our favourites. Don't skip the butter though!

Why it's great

  • It could not be easier
  • It uses mostly inexpensive ingredients you probably already have in the cupboard
  • It actually tastes pretty good, even though it has dried fruit in it, which is basically the debbil

Allergy info:

  • Contains dairy and gluten
  • Excellent for people who have an egg allergy, because it doesn't have any eggs in it
  • Also excellent for vegetarians, because it's a fucking cake

PS. don't let the dog eat it!

    If I can eat more cake then I am definitely becoming vegetarian - it's also good news that I actually eat something without having to share it with the pups too! Great recipe.

    This recipe looks quite simple and quite tasty. I don't keep golden raisins on hand, but I might pick some up to try it. Funny thing is I have always disliked fruitcake, too, but last Christmas I was in the grocery store and saw a display. I thought, "maybe I should give that another try - it looks quite tasty". And then I immediately thought "I must be getting really old if fruitcake looks tasty"!

    Oooh, there are questions! 1: Drop biscuits, for yesterday's dinner and today's breakfast. 2: Probably Williamsburg Inn chicken and dumplings. The recipe I'm linking is closest to the way we do it, but all of them leave out the important part: Make sure each dumpling submerges completely.     You made me think about peppers (that's right, not about fruitcake at all). My first encounter with them was on a family holiday in Bulgaria and I hated them ever since. In every shape or form. That is, until I found out that pickled peppers, especially sweet pickled peppers, in addition to sounding good, are actually edible. Now I feel like having a sandwich with sweet pickled peppers of the kind that I can only buy in Poland, almost 900 miles from where I am now, which would make it a hell of a long trip to the shops. Thanks a lot!

    It's not often I can say I thoroughly enjoyed reading a recipe, but that's definitely the case here! I can't imagine why you'd go and call golden raisins "sultanas" but I'll give you that one. 😉 Really, a fun read and I will have to try this one.
