Make Your Salad a Meal
Europe Sweden Sillsalat is a salad prepared with finely sliced or minced pickled herring, diced boiled potatoes, pickled beets, pickles, apples and chopped onions, The ingredients placed in a large bowl are tossed with a sour-sweet dressing made with vinegar, water, sugar, pepper, and (optionally) cream or yogurt. One could also use sour cream.

Largest Creatures of the Deep
Beluga Sturgeons Beluga sturgeons live in rivers. They grow up to 24 feet in length making them the largest freshwater fish. They are native to the Caspian and Black Sea and migrate to spawn in freshwater rivers. These ancient fish are known for their roe, prized globally as beluga caviar. Beluga sturgeons are bottom dwellers and feed on fish and invertebrates.

I Miss the Rains in Africa
“Africa” is a son that was recorded by the American rock band Toto. It is the final track on their 1982 album Toto IV. This was the second single released from the album in Europe and the third in the US. The song was written by band members David Paich and Jeff Porcaro, produced by the band, and mixed by engineer Greg Ladanyi. Rolling Stone magazine ranks it at number 452 on the list The 500 Greatest Songs of All Time. I chose it because of the line in the lyrics - I miss the rains in Africa.

Europe Iceland Iceland is a Nordic island country between the North Atlantic and Arctic Oceans, on the Mid-Atlantic Ridge between North America and Europe. The man-made Blue Lagoon offers visitors baths in thermal springs. This natural hot spring is surrounded by snow and volcanic rock. It has become a tourist attraction and people come to enjoy the lagoon. It holds a temperature of about 100 degrees year round.The lagoon is blue due to the high levels of silica in the salty water. The Blue Lagoon is close to the Keflavik International Airport.
