World's most "Diverse" Taco...

It's an Italian Mediterranean Taco!

Hello! I am a singer song-writer at RohiniWorks.com. I love to cook food at home that is farm-fresh, mostly vegetarian, and rustic. Most importantly, the food needs to make me feel HAPPY.

My recipes include ingredients from my favorite cuisines including Indian, Italian, Mediterranean, & Asian. At the core of my cooking is my belief in "Sattvic" or simple and wholesome vegetarian food that brings more natural energy to the body. Humans, in general, have a knack for being attracted to more fried foods that are unhealthy for the body and cause it to be more lethargic. Let's try to break this habit with this AWESOME recipe!

The ingredients in this dish are corn tortillas, feta cheese, spinach, plant-based sausage, broccoli, garlic, chipotle aioli, olive tapenade, garlic, paprika, salt, black pepper, and more!

I was inspired to make this dish because I felt the need to be creative with the ingredients I had available in my fridge during the Quarantine. My goal is to basically inspire people to be more active during this time period. What is a better way than to cook healthy food in the kitchen! I am also someone who doesn't mind snacking throughout the day, so I can actually have 10 of these tacos (but not in one sitting).

So, here's how we make this dish:

1) First, we prepare some plant-based sausage (they literally taste just like sausages). We dice them evenly into quarters, throw them into a big skillet along with some broccoli - our green motivation.

2) We need to spice up our filling, so I also dice some peeled garlic and onion.

3) I do not shy away from throwing in a range of spices- it is okay to take risks! Some spices I recommend using are paprika, garlic powder, salt, black pepper, and oregano - basically, the spices that the people of use in the Mediterranean and Italian regions of the world!

4) While the plant sausage filling is cooking away, consider the toppings to include in your taco. What would you add for freshness? Maybe spinach, lettuce, cucumber, or pickle? Add them all! I chose to add spinach as this is what I had available. Do you also like a specific condiment? The aioli and olive tapenade were available in my fridge so I pulled the jars out at the right time. And don't forget the feta cheese - an absolute delicacy in Greece. I am told this ingredient is a SUPERFOOD, which means it can probably extend our ability to live longer and make us IMMORTAL muahahaha! Just kidding, I don't want to "overpower" these ingredients with too much hype ;).

5) I'm sure the plant sausage filling is done being cooked now. Our next step is to throw the soft tortillas onto a smaller skillet. They may puff up a bit from the heat, which is a good sign! Once, they're done, we are ready to fill our baby tacos!

6) Fill them baby tacos up with the spinach, pickle, sausage filling, and condiments! And TRUST ME, they will not only look colorful, but INCREDIBLY DELICIOUS.

Tacos sound like they're simple to make, but you have to think about whether the ingredients you're throwing in are "making sense" together or taste delicious in one bite. I took a couple bites, and let's just say, I didn't stop eating! HAHA! I was incredibly pleased by the flavors I was able to bring from across the world to these baby tortillas.
