To cook jollof rice, you'll need the following ingredients:
- 2 cups of rice
- 500grams of chicken or fish or meat
- 4 cups of water
- 1 can of tomato paste (6 oz)
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 teaspoons of minced garlic
- 2 tablespoons of vegetable oil
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of curry powder
- 1 teaspoon of thyme
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- 4-6 seasoning cubes
Here are the steps to cook jollof rice:
1. Cut and Marinate your chicken, fish or meat with two seasoning cubes, little curry, little thyme, onions and little salt. Set aside for few minutes
2. Boil on slow heat with a cup of water water for about 15 minutes
3. Set the broth aside
4. Heat your vegetable oil in a large pot over medium heat and fry your chicken
5. Set your chicken aside after frying
6. Rinse the rice in cold water and set aside.
7. To your chicken oil. Add the chopped onion, red bell pepper, green bell pepper, and minced garlic to the pot. Cook until the vegetables are soft and the onion is translucent.
8. Add the tomato paste, salt, black pepper, curry powder, thyme, paprika, and cumin to the pot. Stir until the spices are well combined.
7. Add the rice to the pot and stir until it is coated with the tomato mixture.
8. Add the water and broth to the pot and stir well.
9. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
10. Cook the rice for about 20-25 minutes, or until the rice is tender and the liquid has been absorbed. Add little seasoning cubes or salt if needed.
11. Remove the pot from the heat and let it sit for about 5 minutes.
12. Fluff the rice with a fork and serve.
