Delicious Meat Dishes
Pork Vepro Knedlo Zelo is the name of the Czech national dish that in translation means pork roast with bread dumplings and sauerkraut. The pork is roasted with chopped onions. After the pork is done the drippings are used to make a delicious sauce. The sauerkraut is stewed and can be adjusted for taste from sour to sweet. If you prefer sweet add a teaspoon of sugar to the sauerkraut as it is stewing, If you prefer you can use red cabbage instead. To the sauerkraut or red cabbage, you can add sliced or diced bacon that has been browned and seasoned.

Do You Know the Difference Between These 2 Portuguese Pastries?
Let me be honest with you: I am writing this to save myself some time. Over the years, I have spent hours explaining the difference between pastel de nata and pastel de Belém to foreigners who have visited my home country of Portugal. Wherever we meet in the world, they always mention the pastel de nata that they tried and loved in their last visit to Lisbon. And then I always realize they didn’t try pastel de nata but pastel de Belém.

The truth on Italian Food
Like few other cultures in the world, Italy is synonymous with food. People from all over the world love and romanticize it. Is there anything like Dean Martin’s “That’s amore” playing softly in the background as the steaming plate of Spaghetti and meatballs are placed in front of you.

Hot Sauce and I Have a Love/Hate Relationship
I put sriracha on everything. Well, mostly everything. Like candy, for example, there are some things that it just wouldn't go with, in my opinion. But, I put it on pizza, spaghetti, and even salads to give them a little extra kick they wouldn't otherwise have.

Express Espresso
The smell of coffee, the social engagement which accompanies drinking it. The romance of the poet, writing his heart onto the paper, being kept alert, by his cup of coffee. The stronger the better. The Paris cafe, the beret hat. I guess it is not surprising that when I got older I was seduced by the desire to experiment with coffee. I never liked it black and I had learned as a child that it was no good mixed with a half a cup of milk. The way my mother made it for me when we went to social engagements. I quickly learned that sugar does not usually complement the taste of the brew. And yes I did drink it when I wrote, and no , it didn't make me more creative. Coffee in inexpensive dives was often watery, so I aimed to go were the flavor would be richer, and unfortunately more expensive.

The Taste Of Asia
Chilli crab is a dish from Singapore. This delectable dish is made with stir-fried crab in a tomato-based, sweet, savoury, and a bit hot chilli sauce. Use crab crackers to get at the meat in the claws. The popular crab of choice in Singapore is mud crab. This popular dish began as street food and now is considered to be the national dish. You can find chilli crab in many restaurants and since the crab is served in its shell it is also a challenge to eat it using your hands. The dish is served with bread to soak up the delicious chilli sauce.

Smoked Brisket: Thinking Outside the Box
Bar-b-que is a time honored tradition. The pitmasters of yore and today have their secrets, there methods, and some pretty serious prejudices. They can get pretty defensive if someone suggests an alternative method or disagrees with there golden rules. Now, that is not to say that all BBQ people are like this. And of course there has been debate since time immemorial based on region and method whether it is ribs, pulled pork, BBQ sauce, or in this case brisket. Now don't get me wrong, a brisket cooked at 200-250 degrees Fahrenheit for 16 hours is definitely damn delicious. There's a reason people line up at Franklin's BBQ at like 4am to get in and partake in his tasty nums. I know backyard smokers who insist on cooking for 16 hours. They get up as early as you would need to in order to get into the most popular BBQ joints. However, my take here, isn't so much that this method is wrong (I am also certainly not saying that I can make a brisket that is as good as Aaron Franklin's). What I am saying here is: You can make a damn good brisket in around 6 hours, 8 with a couple hours for resting.

Forbidden Grains
The Chinese emperor watched as each cover was lifted from each tray of food, steam billowing out. There was grilled fish and a wide variety of vegetables. Foods that pretty much any one in the kingdom could get their hands on. All but one. One bowl of purplish looking rice known as black rice that no one of the lower class could touch. Black Rice was forbidden for pretty much every person that was not apart of the royal family. Due to its high nutritional value and low grain per hull, it was kept to the highest class that could afford it. The antioxidants and vitamin E is good for support in the heart, brain, skin and eye health as well as boosting the immune system. Higher in protein, iron and fiber compared to the "healthy" brown rice and the white rice that essentially breaks down into sugar. It provides a more stable energizer rather than a sugar rush. The husk is left on, so if you decide to give this a try I would soak it ten to twenty minutes before cooking. It wont be soft like Nishiki, japanese rice, and the taste will be on the nutty side but honestly its next to nothing. So I'm giving you my secret recipes! Better to drop gems than let them turn to stone, right? The way I flavor it up is with a good sprinkle of Shiso, pickled plum leaf, and then I squeeze half of a lime over it. That lime also aids with iron absorption which pairs perfectly with the black rice, adds even more immunity and helps with skin health as well. Next you slice up some pickles, and if you are like me then you cut up a celery stalk and a jalapeno to replace the claussens you are about to eat so you don't waste all that good pickle juice. Then you dice up a nice and soft ripe but not mushy avacado on top and booyah! You get to figure out if you want to lightly grill some wild salmon and squeeze a lemon on it or marinate some chicken wings in soy sauce and bourbon. Oooooh my mouth is watering just thinking about it. Now we move on to the sides. Do you go and bust out the olive oil to sautee some fresh spinach, sweet onions and shiitake mushrooms or grab the Himalayan pink salt to boil black beans and corn? Yes protein bowls will be called upon at least twice a week if not thrice! Its all about THrice hahah No? Well anyways I imagine I pretty much live on protien bowls at this point, they are easy to dish up and with a nice mix you will have all kinds of flavor in your mouth with every bite. What I also imagine is some people of the lower class getting their hands on some and seeing their face expression once they tasted it. The excitement it must have been to get a bite of luxury, YES AND FINALLY THE MOMENT WE HAVE ALL BEEN WAITING FOR aaaand "This bland a$& @!#% is what those robe wearing uppities eat?" Without knowing about antioxidant and vitamin E levels I would have stayed away as well but knowledge is power. And this is just the rice we're talking about people! I don't know, maybe a little more digging, aka googling, and we'll find out about the vibrations of their Jade jewelry has some crazy effect on prosperity and the heart chakra *cough cough wink cough* Don't get me started or I will give you everything you need to align yourself with the most high, the universe, God or whatever floats your boat but no this is about rice. Ah yes Black Rice, treat yourself don't cheat yourself.
