Fall and winter baking just wouldn't be the same with soft molasses cookies and the cozy vibe they give while baking. This molasses cookie recipe is the only one you'll need to provide you with soft, warm spicy cookies to share. Molasses cookies are similar to gingerbread, so why not try them now if you've never made them before?
The day I made a batch of these soft molasses cookies for my boyfriend's son who lived across the country. These were his favorite cookies and he had recently had many major life changes all at once. I just wanted to send them as a small gesture that I hoped would encourage him.
Plus, keeping his dad out of these cookies, as he is a diabetic with a fierce sweet tooth.
I can't tell you of the delicious aroma these cookies made as they were baking! Perfect for a fall or winter day.
This recipe is for soft cookies. Personally, I'm not a fan of the hard molasses cookies that you could practically break a tooth when you bite into. These fit the bill and tasted amazing.

Soft Molasses Cookie Recipe You'll Love
Ingredients
- 2 c. flour
- 1/2 t. ground cloves
- 1/2 t. ground ginger
- 2 t. baking soda
- 1 t. ground cinnamon
- 1/2 t. salt
- 3/4 c. olive or avocado oil
- 1 c. sugar
- 1/4 c. molasses
- 1 egg, room temperature
Directions:
In a bowl, combine dry ingredients together (except for sugar), and set aside.
In another bowl combine the remaining ingredients and mix well with a mixer. Gradually stir in the dry ingredients to the wet ones.
Chill the dough in the refrigerator for several hours.
Remove from fridge, roll into 1 or 2-inch balls, and roll into sugar. Place on a cookie sheet lined with parchment paper.
Bake at 375° F for 8–10 minutes. Place on a cookie cooling rack to finish cooling.
