When you are part of a flock with 14 hens you often find yourself saying out loud: What the f**k am I going to do with all these eggs!?

When eggs hit $4 a dozen in my area, I got worried. So when they hit $6 a dozen, I was glad my worry made me proactive. But now I have a wonderful problem to have: too many eggs sometimes. I give them to my neighbors, my extended family. But 14 eggs a day is a lot, and I am not quite there yet. Only 6 of them are currently old enough to lay, plus the duck.

The day all of my hens are laying my house will probably look like the Easter Bunny's storehouse.

In order to prevent drowning in eggshells my family will simply eat quiche for the rest of their lives.

I love quiche because it's easy to make, it's quick, and most of all, it's healthy. It's like a protein casserole, you replace the high-fat creamy ingredients with two simple ones: egg and milk (or cream). To eliminate most of the carbs, you can eliminate the crust. You can customize it with any ingredients you want. It's packed full of protein and nutrients from whichever meats and veggies you put in it.

The omelet can relate to its versatility. And if you think about it, quiche is just a baked omelet. (That is a fact in my ADOhSparkle brain, not an actual fact, okay guys?)

One of my family's favorite versions of this dish is the cheesy zucchini variety. Take this recipe and go play around and make it your own!

Some quick notes before we start: I usually feed anywhere between 7 to 10 people per meal, so my recipes are always mainstreamed for large quantities. If you aren't feeding that many people, you should probably cut my recipe in half for portions.

Equipment You Need:

A 9"x 13" x 2" baking dish. Or any other baking dish that you might have - depending on the amount you want to make.

A medium or large mixing bowl. I always prefer to have metal or silicone items in my kitchen, they are easier to sanitize.

The most basic of graters. But if you have a fancy one, that's cool too.

The Ingredients I Used:

20 Eggs

4 zucchini

Shredded cheese. I used a blend of cheese that has 3 different cheeses. About 2 cups of it (don't judge us, my family really likes cheese)

Salt and Pepper (or other seasonings you like) to taste.

Non-stick spray or extra virgin olive oil to coat the pan in.

Yes. Really. Only 4 ingredients plus the oil or spray.

Optional ingredients:

The eat of your choice - I usually go with some ground turkey or beef since that texture blends the best.

Other veggies and fillings, such as mushrooms or peppers.

The Process

1. Preheat your oven to 350 degrees (175 C) Shred your zucchini into the mixing bowl.

2. Crack all of your eggs into your mixing bowl. Don't forget to compost them and the end bits of the zucchini (or grind them up and feed them back to your chickens).

3. Add 1 cup of your cheese to the egg yolk.

4. Season to your liking with whichever seasons you play with.

Personal hack: I also add about 1 cup of SIFTED all-purpose flour, to make the quiche a little more filling for my growing kids who can't eat enough. I also usually make two versions at a time, one with meat, and a vegetarian version.

5. Bake for 15 minutes. Pull it out and put the other cup of cheese right on top! Spread it out evenly, and bake for another 10 to 15 minutes. The cheese should be golden and bubbling when you pull it out.

6. Let it sit for about 5 minutes before serving!

Pro tip: Try eating with your favorite hot sauce ;)

    Ha ha ha! That is funny. I, too, have had egg problems in the past. Quiche is always a winner!

  • I've never had quiche before. I love cheese and zucchini. I'm a vegetarian but I was wondering if we can make quiche without eggs?
