Austria

Trezesniewski brotchen are open-faced sandwiches. Rye bread is cut into shapes. The bread is topped with ingredients like bacon with egg, salami, tomato, smoked salmon, mushrooms, and paprika. There are many varieties.
China

Shumai is a dish that consists of open-topped dumplings. The dumplings are filled with steamed ground pork, chopped shrimp, and Chinese black mushrooms. After the dumplings are steamed, they are garnished with a single pea, a fish egg, or a small piece of carrot on top.

Twice-cooked pork is a delicious Sichuan dish that is made with fatty pork leg or belly with skin intact in two different ways. First the pork is simmered in a pot and, when done, cooled in the fridge. Then the meat is sliced and stir-fried with vegetables like cabbage, bell peppers, leeks, and mushrooms.
Czech Republic

Smaženice is a popular Czech dish that is made with diced mushrooms braised with onions, seasoned with cumin, and combined with lightly beaten eggs.
France

Coq au vin is a classic French stew originating in the Burgundy region. Its two main ingredients are coq or rooster, and vin or wine, a bold rustic red wine. The rooster is cut up and combined in a pot with rooster blood, onions, carrots, garlic, thyme, bay leaves, parsley, mushrooms, salt, pepper, and red wine. It is cooked over low heat until the chicken is tender.

Mushroom quiche is a delicious French pie. A pastry shell is filled with a mix of mushrooms, shallots, port, eggs, whipping cream, and grated Swiss cheese. Flavoring is added with salt, pepper, and a dash of nutmeg. The quiche is baked until puffy and browned.
Hungary

Gombapaprikas is a vegetarian stew from Hungary. The stew is a combination of mushrooms, paprika powder, onions, tomatoes, garlic, flour, and sour cream. The mushrooms in creamy sauce are usually paired with nokedli dumplings, pasta, or rice.
Italy

Risotto ai funghi porcini is a traditional Italian risotto made with porcini mushrooms. The dish includes Arborio or Carnaroli rice, olive oil, butter, shallots, white wine, meat stock, grated Parmigiano Reggiano, salt, and pepper. The onions are sauteed in butter and olive oil with mushrooms, rice, and white wine added. The stock is added later while the risotto is cooking. When the dish is ready, grated cheese can be mixed in.
Malaysia
Bak kut the is a delectable dish from the Chinese culinary tradition. (pictured above) The dish consists of cuts of pork cooked in a broth seasoned with star anise, cinnamon, garlic, and fennel. It is complemented with tofu puffs or mushrooms and served with various condiments.
Mexico

Hongos a la Mexicana is a traditional dish of Mexican-style mushrooms. The dish combines assorted mushrooms, oil or lard, onions, garlic, tomatoes, jalapenos, coriander, corn, salt, and pepper. The mushrooms are sliced and sauteed with the rest of the ingredients and seasoned with salt and pepper.
Peru

Ceviche de champignones, or mushroom ceviche, is a delectable appetizer. It is prepared with slices of firm champignon mushrooms, lime juice, minced garlic, salt, and pepper. Chili peppers and sliced onions can be added.
Poland

Rolada z kurczakiem i pieczarkami is a chicken roulade stuffed with mushrooms and an egg-cheese coating. The dish is prepared with chicken breast slices topped with fried mushrooms and onions, then rolled up and baked in an egg-cheese batter.
Spain

Croquetas de boletus are small Spanish fritters prepared with a creamy bechamel base and diced, sauteed boletus mushrooms. The base is well-chilled and then shaped into round forms. Each piece is coated in egg wash and breadcrumbs and deep-fried until golden and crispy.
Sweden

Svamptoast is a traditional Swedish open-faced sandwich. The sandwich is topped with a combination of chanterelles or wild mushrooms, butter, onions, heavy cream, parsley, lemon juice, salt, and pepper. The mushrooms are chopped and sauteed with onions. Then cream and parsley are added and the mixture thickened. Bread slices are fried in butter on both sides until golden and topped with mushroom mixture.
Thailand

Tom Yum is a spicy, sour, and aromatic soup traditionally served with rice. The soup is made with shallots, lemongrass, fish sauce, minced fresh garlic, shrimp, mushrooms, kaffir lime leaves, lime juice, and minced Thai chili peppers. It is usually served as an appetizer.
Turkey

Kuzu sis is a traditional Turkish kebab. It is prepared with chunks of lamb, mushrooms, green peppers, shallots, cherry tomatoes, and eggplants. The lamb chunks are marinated with yogurt, olive oil, garlic, cumin, Turkish pepper paste, and black pepper. The meat and vegetables are skewered and then grilled.
