How to Make Grilled Stuffed Pomfret In Turmeric Leaf

To Clean Pomfret Fish

  1. Start by cutting the pomfret fish into fillets. Use a sharp knife to slice along the spine to get two even halves.
  2. Rinse the fillets in cold water to remove any dirt or debris.
  3. Place the fillets in a colander and rinse again with cold water.
  4. Place the fillets on a cutting board.
  5. Using a sharp knife, carefully remove any scales from the fillets.
  6. Rinse the fillets again to remove any scales.
  7. Place the fillets in a large bowl and add enough cold water to cover them.
  8. Add a few drops of lemon juice or white vinegar to the water and let the fillets soak for 10 minutes.
  9. Rinse the fillets again in cold water to remove any remaining scales.
  10. Pat the fillets dry with a paper towel and they are now ready to cook.

For Stuffing

  1. Heat oil in a pan, fry onion and garlic till light brown in colour, then add chopped prawns, peri peri powder, salt and chopped coriander leaves.
  2. Cook tilll mixture is dry and prawns are cooked. Keep it aside and let it cool.

For Marination

  1. Clean the pomfret and wash properly. Now slit the pomfret from the side.
  2. Mix all the marinade ingredients properly and apply evenly to the pomfret and let it marinate for 15-20 mins.

For Assembling and Cooking

  1. Now stuff the prepared prawns mixture inside the pomfret properly and then wrap the pomfret in turmeric leaves. Tie properly with the help of a string.
  2. Place it in a hot oven at 220 degree C for 20-25 minutes.
  3. Remove string from the fish and serve hot.
