I don’t particularly enjoy cooking. I do it when I have to, but I wouldn’t call it a hobby. Still, every now and then, when a food trend catches my attention, I suddenly feel compelled to give it a try. This morning, I woke up determined to make Meghan Markle’s one-pot pasta—a dish that has been hyped up for its simplicity and elegance. The only problem? I had no pasta. Since I usually avoid carbs, there wasn’t a single box in my kitchen. So, off to the store I went, grabbing all the necessary ingredients.

The Ingredients: Simple, Yet Flavorful.

To make this easy one-pot pasta, you’ll need:

1 pound dry pasta (spaghetti, linguine, or any pasta of your choice)

1 pint cherry tomatoes, halved

1 medium onion, thinly sliced

3 cloves garlic, minced

1/4 cup fresh basil, chopped

2 tablespoons olive oil

4 cups water (or vegetable broth for added flavor)...I used chicken broth.

Salt and pepper to taste

I also added some grated parmesan cheese.

The appeal of this dish is its simplicity. Meghan’s version calls for the ingredients listed above and requires only one pot to cook everything. It’s straightforward and fuss-free—perfect for those who are looking to cut down on cleanup while still enjoying a tasty meal.

The Cooking Process: More Thoughtful Than It Seems.

Despite the term “one-pot,” this dish doesn’t mean just tossing everything together and hoping for the best. The cooking process requires a bit of technique. First, I started by heating the olive oil in a large pot over medium heat. Then, I sautéed the garlic and onion until they became fragrant and softened, which didn’t take long at all. The aroma was already filling the kitchen, and I could tell this was going to be a flavorful base for the pasta.

Next, I added the halved cherry tomatoes to the pot. As they cooked, they began to soften and release their juices, making a deliciously sweet and savory sauce. Once the tomatoes had broken down a bit, I added the dry pasta. I gave everything a gentle stir before pouring in the water (or vegetable/chicken broth, for extra flavor) and seasoned with salt and pepper.

From here, the real magic started. I turned the heat up and let everything simmer. As the pasta cooked, it absorbed the flavors from the tomatoes, garlic, and basil. The starch from the pasta thickened the liquid into a light, silky sauce. I stirred occasionally to make sure the pasta cooked evenly and didn’t stick to the bottom of the pot.

After about ten minutes, the liquid had reduced enough to coat the pasta perfectly. The tomatoes had softened just enough to burst open, adding bursts of flavor with every bite. I finished it off by stirring in the fresh basil, which added a bright, herbal note to the dish.

The Verdict: Surprisingly Good (But Will I Do It Again?)

I took my first bite, fully expecting the dish to be bland and underwhelming, but to my surprise, it was delicious. The garlic had infused perfectly into the pasta, the tomatoes were sweet and juicy, and the fresh basil tied everything together. The sauce wasn’t overly heavy but was still rich in flavor, thanks to the simple yet effective cooking process.

Would I make it again? Maybe. It’s a great option for those who want a meal with minimal effort and cleanup. However, as someone who isn’t particularly fond of cooking, I don’t know if I’d jump at the chance to make it regularly. That said, if I find myself needing a quick, easy, one-pot dish, I’ll definitely consider revisiting this one.

It’s not fussy, and it doesn’t require hours in the kitchen—perfect for anyone who wants a fuss-free, flavorful meal. If you enjoy experimenting with quick recipes, this is worth trying at least once.

Would I stock pasta in my kitchen after this experience? Probably not, as I’m still trying to limit my carb intake. But for one morning, I gave in to the hype, and it turned out to be a surprisingly enjoyable meal.
