Vegan Berry Smoothie

Ingredients:

1 cup mixed berries (fresh or frozen)

1 ripe banana

1/2 cup almond milk

1/2 teaspoon vanilla extract

Instructions:

Combine all ingredients in a blender and blend until smooth

Pour into a glass and enjoy

Vegan Pesto Pasta

Ingredients:

2 cups cooked pasta

2 tablespoons vegan pesto

1/4 cup cherry tomatoes, halved

Salt and pepper to taste

Instructions:

In a large bowl, toss together the pasta, pesto, cherry tomatoes, salt, and pepper

Serve immediately

Vegan Bruschetta

Ingredients:

2 slices of bread, toasted

1/4 cup diced tomato

1 tablespoon chopped fresh basil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Instructions:

In a small bowl, mix together the tomato, basil, balsamic vinegar, salt, and pepper

Spoon the mixture onto the toasted bread and serve immediately

Vegan Quinoa Salad

Ingredients:

1 cup cooked quinoa

1/4 cup diced cucumber

1/4 cup diced red bell pepper

1/4 cup chopped fresh parsley

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Instructions:

In a medium-sized bowl, mix together the quinoa, cucumber, red bell pepper, and parsley

Add the olive oil, lemon juice, salt, and pepper and toss until well combined

Serve immediately

Vegan Roasted Chickpeas

Ingredients:

1 can of chickpeas, drained and rinsed

1 tablespoon olive oil

1/2 teaspoon smoked paprika

Salt and pepper to taste

Instructions:

Preheat the oven to 400°F (200°C)

In a small bowl, mix together the chickpeas, olive oil, smoked paprika, salt, and pepper

Spread the mixture onto a baking sheet and roast for 15-20 minutes, until crispy

Serve immediately

Vegan Stuffed Avocado

Ingredients:

1 ripe avocado

1/4 cup black beans, drained and rinsed

1/4 cup diced tomato

1 tablespoon chopped fresh cilantro

1 tablespoon lime juice

Salt and pepper to taste

Instructions:

Cut the avocado in half and remove the pit

In a small bowl, mix together the black beans, tomato, cilantro, lime juice, salt, and pepper

Spoon the mixture into the avocado halves and serve immediately

Vegan Falafel Wrap

Ingredients:

1 large tortilla wrap

4-5 falafel balls

1/4 cup diced tomato

1/4 cup diced cucumber

1 tablespoon hummus

Instructions:

Heat the falafel balls according to package instructions

Spread the hummus onto the tortilla wrap

Add the falafel balls, tomato, and cucumber

Roll up the tortilla and slice in half

Serve immediately

Vegan Spinach and Mushroom Quesadilla

Ingredients:

1 large tortilla wrap

1/4 cup sliced mushrooms

1/4 cup fresh spinach

1/4 cup vegan cheese shreds

Instructions:

Heat a large skillet over medium heat

Place the tortilla wrap in the skillet and sprinkle with mushrooms, spinach, and vegan cheese

Vegan Hummus and Veggie Wrap

Ingredients:

1 large tortilla wrap

2 tablespoons hummus

1/4 cucumber, sliced

1/4 red bell pepper, sliced

Handful of mixed greens

Instructions:

Spread the hummus onto the tortilla wrap

Add the cucumber, red bell pepper, and mixed greens

Roll up the tortilla and slice in half

Serve immediately

Vegan Black Bean and Corn Salsa

Ingredients:

1 can of black beans, drained and rinsed

1/2 cup corn kernels

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

Salt and pepper to taste

Instructions:

In a medium-sized bowl, mix together the black beans, corn, red onion, and cilantro

Add the lime juice, salt, and pepper and toss until well combined

Serve immediately with tortilla chips or as a side dish

Vegan Chickpea Salad

Ingredients:

1 can of chickpeas, drained and rinsed

1/4 red onion, finely chopped

1/4 cucumber, diced

1/2 red bell pepper, diced

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

In a medium-sized bowl, mix together the chickpeas, red onion, cucumber, and red bell pepper
