For the Love of Chickpeas
I love chickpeas. I mean, I LOVE CHICKPEAS! Yes, I was yelling that from the mountaintop or at least from my second floor bedroom. Tori Avey gives lots of information about the chickpea, chick pea or as we called it in Spain: garbanzo bean. And Spain was the first place I had ever had a chickpea! I lived there starting in 1985 through June of 1986, before that my family in Ohio had never exposed me to their incredible flavors! My family ate adventurously for the area and time period, but never had any type of beans.

The last 4 weeks: 7, 8,9 and 10 of my Plant Based Journey
It has been days and weeks since I last got on and posted an update on my plant based journey. So today I’m posting about weeks 7, 8, 9 and 10 - I know - I haven’t gotten on in forever. Life has been hectic and I have piles of excuses. Please know that I am staying plant based and working on losing weight. Yesterday I even made homemade fat-free, plant based ramen with traditional Japanese ramen noodles (WHICH ARE NOT FRIED and horrible for you)! How could we ruin a meal that is so healthy and fantastic? Seriously - I love ramen because it just tastes like noodle soup that has ginger and garlic throughout. And I added shredded bok choy as my greens. I slightly used the following recipe as my base but my tofu was air fried so it would be crunchier.

The Moral Necessity of Veganism
Please join me in imagining a planet where the following happens – billions of cats and dogs are raised in unpleasant conditions, killed and then eaten by humans. Now, imagine that these dogs and cats feel as much pain, if not more, than humans, that the planet’s scientists have shown how eating them is harmful to humans and that the process of growing and killing them is destroying the planet’s ecosystem. Please take a moment to reflect on this.

The Best Vegan Pumpkin Chili
The first time I ever had pumpkin chili was at… A bagel shop? It was a strange place to find chili on the menu, but I live in New England, and when it’s fall in New England, pumpkin is fair game just about anywhere. On front porches, in muffins and whoopie pies — we even have pumpkin festivals.

Even if you’re not ready to fully commit to eating no meat or animal products at all, perhaps you might be willing to try a few new recipes with less of them in them.
