WESTON, Fla. – Researchers are learning more about the possible benefits and drawbacks of plant based meat and dairy alternatives.

At study at the University of Bath found evidence that these products can be better for both our health and our environment but nutrition experts say the important consideration for consumers is understanding the content of some plant based products.

“Not all plant based meat alternatives are created equal in fact many are very high in sodium, three times higher in sodium than fresh beef. Also some are high in saturated fat if they’re made from coconut oil which is not friendly if you have high cholesterol,” said Candace O’Neill, a Nutritionist with Cleveland Clinic Weston.

O’Neill said many of her clients are becoming ‘flexitarians’ which means they’re reducing their animal protein intake and swapping it out for plant based alternatives, which she says can create a healthy dietary balance.

And new research shows long COVID gives most people problems with some of life’s day-to-day activities.

The Centers for Disease Control and prevention found 81% of people with long COVID reported day-to-day limitations.

Twenty five percent reported significant limitations.

According to the CDC long COVID occurs when a person who has cleared the infection still shows symptoms at least four weeks later.

In some cases the symptoms can last for months or years.

The researchers found young adults between the ages of 18 and 29 were among the highest share of people reporting trouble performing daily tasks at 86 percent.

Plant-Based Dishes For The Break-Fast Buffet

We all love the traditional whitefish/bagels/lox break-fast meal — and what’s not to like?!

But these days, many people are adopting more plant-based eating habits, either for environmental and ethical reasons, or a need to reduce cholesterol or sodium intake, to lose weight or for other health considerations.

My sister-in-law Elisa, who is a healthy eater, made these recipes on a recent visit and, although not traditional, they would be good additions to the break-fast buffet. Both are pareve, healthy, deliver plenty of fresh veggies along with fiber, protein and, of course, they are delicious. Both of these dishes are also colorful, so they add some visual pop and interest to the buffet.

When cooking for a holiday crowd, it is ideal to offer a variety of dishes to accommodate all preferences and needs; these two recipes do just that! For folks who need to watch their sodium, try using low-sodium soy sauce, and reduce the amount as required. Ditto for lower fat diets concerning sesame oil and peanut butter.

Cauliflower Lettuce WrapsServes

These mimic chicken wraps seen on many Chinese and Vietnamese menus.Cauliflower rice is available in the produce sections of most supermarkets these days. If you can’t find it, see the note below on how to make your own.The wraps are designed to be a finger food, but they can be rather messy; some may wish to serve these plated with a knife and fork.

1 teaspoon canola oil2 cups cauliflower rice½ cup diced water chestnuts¼ cup diced red onion3 cloves garlic, crushed2 tablespoons hoisin sauce1 teaspoon soy sauce1 teaspoon Sriracha or your favorite chili sauce12 lettuce cups, either from Boston or bibb lettuce, small romaine heads, or icebergOptional garnishes: chopped peanuts or cashews; cilantro sprigs, sliced jalapenos and/or sliced scallions

In a large skillet, heat the canola oil and sauté the onion, garlic and mushrooms until fragrant. Add the water chestnuts, cauliflower rice, soy sauce, hoisin and Sriracha with a splash of water to help distribute the sauces. Continue cooking for about 5 minutes until all vegetables are cooked. Remove from heat and cool slightly — you don’t want the mixture added to the lettuce while it is steaming hot or it will cook the leaves.

Place the lettuce cups on a large platter and fill them with the cauliflower mixture.

Garnish as desired, and serve.

To make cauliflower rice, divide a large head of cauliflower into florets and small pieces.Blanche the pieces in boiling water for 30 seconds, then place them immediately into an ice bath. Drain thoroughly, and put them in a food processor. Whiz the cauliflower around until the pieces resemble rice. This will make more than you need for the lettuce wraps; save it and use it in salads or as you would rice or couscous.

Spicy Thai Quinoa SaladServes 6-8, depending on portion size

Ingredients:2 cups finely sliced red cabbage2 cups shredded carrots1 large bell pepper, finely sliced2 scallions, chopped2 cups edamame2 cups cooked quinoa1 bunch cilantro, chopped

Dressing:4 tablespoons natural peanut butter2 tablespoons soy sauce2 tablespoons rice wine vinegarJuice of 1 lime1-inch piece fresh ginger, grated3 large cloves garlic, crushed1 tablespoon sesame oil2-3 tablespoons Sriracha or other hot chili sauce1 cup hot water

Mix all the vegetables and quinoa in a large bowl. Set aside.

Mix all the dressing ingredients except for the hot water in a medium bowl. Gradually add the water, starting with about a quarter cup, and whisk. Continue adding water and whisking until the dressing becomes creamy and smooth. It should be thin enough to pour over salad but not too watery.

Pour the dressing over the veggie/quinoa mixture, and stir it together.

This is best if it has some time to sit, allowing the flavors to blend.

Tapping Into The Power Of Plant-based Meals

Restaurants are tapping into a growing population of vegetarians and vegans — as well as those who abstain from meat some of the time — with color and flavorful plant-based breakfast and brunch options.

Chorizo-spiced cauliflower breakfast tacos, and sweet potato breakfast skillets and other vegetable-forward dishes are helping to drive incremental sales by speaking to customers who are reducing their meat consumption and adding more vegetables, for the sake of health or the environment or simply because they are delicious.

For restaurants, attracting these patrons to breakfast and brunch tables is good business. It goes beyond serving the small number of people who are vegan, vegetarian or flexitarian eaters. Just 13% of U.S. Consumers pursue those three eating approaches, according to market research first The Hartman Group. However, a much larger portion of the population is open to eating meat-free on occasion or letting meat play a supporting role in a vegetable-driven dish.

Nontraditional breakfast proteins such as vegan bacon and plant-based breakfast sandwiches are the top two trends in breakfast, according to the National Restaurant Association 2022 What’s Hot Culinary Forecast, and restaurant chains are tapping into a growing market of alternative proteins and vegan dairy products to ride the wave.

Family-dining chain Cracker Barrel Old Country Store, for example, invited guests this summer to try its first plant-based meat analogue, billed in a company news release as “the Impossible Sausage Patty Made from Plants,” in a new Build Your Own Homestyle Breakfast offering.

Alfred, a California-based coffee shop chain offers a Plant-Based Breakfast Sandwich that sports a trio of plant-based products — JUST Egg, Impossible Breakfast Sausage and Violife Cheddar — on a potato bun.

At Socalo, a SoCal-Mexican restaurant in Santa Monica, Calif., from chef-owners Susan Feniger and Mary Sue Milliken, chefs use Impossible plant-based meat as a base to craft their own plant-based chorizo.

“We add our chorizo spice mix, which has cumin, ground chipotle, a little ground ancho, smoked paprika and caramelized onion and it’s really delicious,” Feniger said. “It gives you a different vehicle for flavors and textures than using, say, mushrooms as a variation.”

Feniger and Milliken are longtime proponents of eating in way that puts vegetables at the forefront.

“We’ve always made sure our plates are filled with vegetables,” Feniger said. “Honestly, for like 40 years, going back to our first days at Border Grill, we've done an 80/20 plate with the 20% being protein.”

Although the Socalo weekend brunch menu includes meaty options such as steak and eggs, it also gives prominence to dishes made with fresh, locally grown ingredients. Examples include Market Vegetable Chilaquiles, with red or green sauce, farmers market produce, scrambled eggs, corn tortillas, tomato salsa, crema and queso fresco; El Mañanero Burrito, with scrambled eggs, refried beans, Oaxacan cheese, guacamole and potato chips; and Dogtown Breakfast Plate, with eggs your way, slow-cooked tomato, spinach and smashed fingerling potatoes.

“People who are vegan or veggie are saying, ‘We live in California. Give me great vegetables from the farmers market,’” Feniger said.

Vegetables in a starring role

At First Watch, a Bradenton, Fla.-based breakfast, brunch and lunch chain with more than 445 units, there is an ample selection of dishes centered on vegetables, grains and lean meats prepared with chef-inspired flair. But to date, the brand has not menued a plant-based meat analogue.

“We took a stand early on that we would watch this,” Shane Schaibly said, corporate chef and senior vice president of culinary strategy at First Watch. “We’re going to learn about it and taste it and cook with it. But we really believe more in plant-based items that actually grow in the ground. And that's where we hang our hat.”

Representing First Watch’s approach are egg-white omelets, like the Healthy Turkey, made with roasted onions, tomatoes, spinach and feta, and the Tri-Athlete, with roasted cremini mushrooms, onions, tomatoes and green chilies. Fresh avocados are prominent as a component of Farm Stand Breakfast Tacos, Farmhouse Hash and the Elevated Egg Sandwich as well as on avocado toast.

And in January, First Watch will expand its plant foods portfolio by introducing a new chorizo-spiced cauliflower item, Cauli-Rizo Breakfast Tacos.

“We’re seasoning cauliflower like chorizo with traditional spices,” Schaibly said. The cauliflower preparation is tucked into wheat-corn tortillas with cage-free scrambled eggs, cheddar and Monterey Jack cheese and topped with fresh avocado, lime crema, house-pickled red onion and cilantro.

“Cauliflower, when cooked properly, has fantastic texture and can actually mimic crumbled chorizo,” Schaibly said.

Sustainability in the spotlight

On America’s college and university campuses, the current generation of students is arguably more mindful of sustainable living and healthful eating than any that has come before. With that clientele in mind, as well as those of its other business segments, Aramark became the first contract U.S. Foodservice company to sign the World Resources Institute Cool Food Pledge this year. This is a commitment to reduce the greenhouse gas emissions associated with the food it serves in the U.S. By 25% by 2030.

The company began placing the Cool Food Meals badge on select menu items in Aramark Collegiate Hospitality dining halls beginning with a pilot project at 10 universities during the spring 2022 semester. Now there are 19 campuses in the program and plans to expand the availability of the menu items to 1,500 Aramark locations in the U.S.

The Cool Food Meals badge helps students identify climate-friendly food choices with lower carbon footprints—typically items that emphasize produce, vegetables and legumes and use animal products selectively for flavor. A couple of examples are Turkey Sausage Breakfast Bowl, with diced turkey sausage, avocado spread, red potatoes, feta cheese and roasted mushrooms served over spinach leaves, and Southwestern Sweet Potato Breakfast Skillet, with sweet potatoes, Incogmeato plant-based sausage, peppers, onion, jalapeno, roasted corn and tomato, topped with cheddar cheese and a fried egg.

Although Cool Food Meals addresses all dayparts, breakfast is an especially significant one. “Breakfast is our first interaction with students of the day,” said Kevin Kebea, director of product development and menu innovation at Aramark. “It is very important for us to start the educational process for Cool Foods and communicate that this can be part of your lifestyle and decision making at meals.”

“We know there are people who care about the environment who may not participate in a vegan diet all the time,” Kebea said. “But they know that if they make different choices occasionally it can go a long way. And we’re seeing that, for sure.”

Meat eaters get in on the act

Even in restaurants that cater to meat lovers, plant-forward creations are elbowing their way onto the menu.

On the brunch menu of The Dearborn, an urban tavern in Chicago known for sophisticated American cooking, vegetable-topped, thin-crust pizzas and salads composed with fresh greens such as arugula, tatsoi and frisée and fruits like greengage plums counterbalance indulgent items such as Short Rib Waffle Benedict and Hash Browns with Duck Gravy.

“We always want a handful of things on the menu that speak to plant-forward, plant-based eaters,” said executive chef Aaron Cuschieri. Mushrooms often figure in such dishes because “they are something that non-vegetarians will eat.”

Take the Baby Kale & Wild Mushroom pizza, one of The Dearborn’s thin “tavern style” pizzas, which are cut into squares the way Chicago neighborhood watering holes serve them. It features foraged mushrooms, petite kale, house-made pomodoro sauce, fontina, mozzarella and garlic butter.

However, even healthy eaters may make brunch their “cheat meal” of the week, Cuschieri said.

“At brunch they have no problem breaking the great habits they keep most of the time, because they're going out with friends and enjoying themselves.”

Another Windy City establishment, the upscale-casual restaurant Wood, has a following for house-butchered meats, reflected in hearty brunch items such as a double cheeseburger, BBQ brisket and steak and eggs.

“Overall, our menu is very driven by the butcher program we do,” said executive chef Devin Kreller.

Yet he also has appealing options for patrons whose idea of brunch includes fresh produce and greens. For instance, the Summer Omelette sports fresh corn, roasted tomato, zucchini, goat cheese and basil and comes with a mixed green salad. Also in play is a Truffle Grilled Cheese and Egg sandwich, made with brioche, Gruyère, truffle butter, arugula salad, truffle vinaigrette and a sunny side up egg.

“We’re using as many local farms as possible and highlighting Midwest ingredients,” Kreller said. “We’ve also done vegetable dishes and grain bowls, too.”
