The stew is flavored with bay leaves, thyme, salt, garlic, and black pepper. Flour is used as a thickening agent,

France

Beef bourguignon is a rich, favorable, and complex stew that originated in the Burgundy region. Cuts of beef are stewed for hours along with robust red Burgundy wine, carrots, onions, garlic, thyme, and mushrooms. It is better when refrigerated for 24 hours before serving and reheating.

Belgium

Carbonnade is a traditional Belgian stew that is prepared with beef and dark beef. The stew is a combination of chunks of beef, sweet onions, thyme, garlic, and bay leaves. It is cooked in traditional Belgian dark beer and mustard bread can be added to thicken the gravy.

Czech Republic

Gulas is a hearty meat stew cooked in a dark red sauce seasoned with paprika. The stew is made with beef, pork, chicken, or game meat browned and simmered with onions until the broth thickens. Potatoes, caraway seeds, marjoram, and even mushrooms and sausages can be added.

Austria

Wiener saftgulasch is a hearty stew prepared with diced, lean beef in a thick gravy. Lean beef shank is combined with onions, tomato paste, and lard. The stew is flavored with vinegar, Hungarian paprika, bay leaves, marjoram, caraway, lemon zest, juniper berries, sugar, salt, and black pepper.

Bulgaria

Wine kebab is a popular Bulgarian stew prepared with meat and wine. The beef is diced and browned in oil then simmered with carrots, celery, onions, leeks, and peppers. A generous amount of red wine is added and the stew is cooked until the beef is tender and the flavors combine.

Hungary

Porkolt is the national stew of Hungary. It is prepared with meat like beef, lamb, pork, or chicken simmered in a red sauce with lots of onions, garlic, and paprika powder. Traditionally it is served with dumplings, boiled potatoes, or pasta.

Turkey

Hunkar begendi is a traditional lamb stew that is served on top of creamy eggplant puree. The puree is thickened with milk and cheese. The dish can be topped with a tomato-based sauce or garnished with freshly chopped parsley.

Greece

Kokoras krasotos is the Greek variation of the well-known French dish coq au vin. This dish is made with rooster, Greek red wine, onions, garlic, Greek olive oil, cinnamon sticks, nutmeg, cloves, bay leaves, tomatoes, and Florina peppers or Florina pepper paste. The rooster is boiled in a red wine sauce until the meat is tender.

Kouneli stifado is a traditional Greek stew. It is a combination of pieces of browned rabbit meat with onions, tomatoes, tomato paste, garlic, red wine or red wine vinegar cooked in rabbit or chicken stock and olive oils. For flavor, spices are added such as cinnamon, bay leaf, allspice, oregano, rosemary, cumin, salt, and black pepper. When done the dish is sprinkled with freshly ground black pepper.

Sudtiroler gulasch is a traditional Italian goulash that originated in the South Tyrol region, The stew is prepared with beef, cumin, paprika, olive oil, onions, pancetta, stock, garlic, salt, pepper, and thyme.

Portugal

Rojoes a moda do Minho is a stew made with chunks of pork that have been marinated in white wine and garlic. The stew includes roasted chestnuts, blood, and flour cakes. It is eaten with rice.

Japan

Kare is a Japanese-style curry and a popular dish in the country. There are three main versions of this stew – kare raisu (curry over rice), kare udon (curry over noodles), and kare pan (pastry filled with curry).

Thailand

Phanaeng curry is a Thai curry that has a thick texture and a salty-sweet peanut flavor. The stew is prepared with meat such as beef, chicken, duck, or pork, coconut milk, panang curry paste, makrut lime leaves, fish sauce, and palm sugar.

India

Shahi paneer is a stew originating from Moghul cuisine. It is a cheese curry prepared with paneer cheese, onions, almond paste, and a rich, spicy tomato-cream sauce. The dish is accompanied by Indian bread like naan, roti, or puri.

Chingri Malai is a traditional prawn curry originating in the Bengal region. It is prepared with prawns and coconut milk as well as garam masala spices, fried ghee, mustard oil, onions, hot chili peppers, garlic-ginger paste, and turmeric. It is cooked until the gravy becomes thick and creamy.

Indonesia

Gulai is a spicy stew. It is prepared with ingredients such as offal, seafood, or vegetables. Coconut milk and spices are added for flavoring.

Iran

Khoresh is a flavorable stew that consists of poultry, lamb, or beef along with vegetables and lentils. Variations use fish instead of meat. The sauce for the stew can include tomato paste, fresh herbs, or ground nuts.

Kimchi jiigae is a flavorable stew with kimchi as the base ingredient. The stew consists of diced tofu, pork or seafood, scallions, and vegetables such as potatoes and zucchini.

Chakhchoukha is a favorable stew. It is prepared with torn pieces of thin round flatbread rougag and marga. Other ingredients include diced lamb, tomatoes, chickpeas, onions, and flavorings like cumin, ras el hanout, caraway, galangal, lavender, and red chili peppers.

Gumbo is a hearty stew usually prepared in large, black, iron pots. It can be based on seafood and okra with tomatoes or on turkey and chicken with ham, sausage, and poached oysters. No matter what you choose to prepare gumbo with it is always fragrant and aromatic with onions, garlic, bay leaf, and thyme. The rich stew is served in bowls with a side of rice.

Frijoles churros is a favorable Mexican stew that is prepared with beans, onions, tomatoes, chili peppers, and coriander. Meat such as bacon, ham, or salt pork is added. The ingredients are cooked until the beans become tender.

Indio Viejo is a dish that is prepared with garlic, onions, sweet peppers, and tomatoes. Tortillas soaked in water are ground into a dough and beef is shredded. The beef is fried with vegetables, tortilla dough, and achiote paste. The combination of all the ingredients creates a hearty stew.

Moqueca is a seafood stew. It is made with palm oil, coconut milk, various fish or shrimp or both. It is stewed in traditional clay pots with vegetables and fresh herbs. The stew is served over rice and sprinkled with fresh, chopped cilantro.
