Ingredients

1 cup bulgur wheat

1 red bell pepper

1½ cups chopped onions (divided)

½ cup chopped tomatoes

1 small scotch bonnet pepper (optional)

2 tablespoons oil (vegetable or olive oil)

1 teaspoon mild curry powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

2 bay leaves

2 tablespoons tomato paste

3 cups vegetable or chicken stock

Salt to taste

A handful of runner beans, chopped (optional)

Prepare the Sauce:
