Gnocchi:

A Simple and Easy Recipe

I love gnocchi. So when I was back home visiting my parents I decided to make this for them. They loved it. It is easy and simple to make. You can add sides or you can eat this by itself. I didn't have garlic cloves so I used minced garlic and soul seasoning instead of Italian seasoning. The great thing about recipes is that you can add or take away ingredients. I hope you enjoy this recipe. Gnocchi is easy to find and cheap to buy. Gnocchi is a type of pasta from Italy. The dough is made of potato and ricotta instead of flour and egg.

I had never heard of gnocchi before my daughter-in-law made it one evening for supper. It tasted delicious. You can find gnocchi at the grocery store or the Dollar Tree.

If you are a cheese lover, then give this recipe a try. It has mozzarella and parmesan cheese but you can add your favorite cheese. This recipe makes 4 servings but you can easily double it if you have a lot of people to feed.

Ingredients

1 tablespoon olive oil

1 tablespoon butter

1 spoonful of minced garlic

1 (14-ounce) can of diced tomatoes

2 tablespoons tomato paste

1/4 cup chicken broth

1/4 teaspoon Soul seasoning

1 pound uncooked potato gnocchi

1/2 cup shredded mozzarella

1/2 cup parmesan cheese

dried basil

salt and pepper

Instructions

Pour oil and butter into a skillet over medium heat. Add the minced garlic and cook for about 30 seconds.

Add the following to the skillet tomato paste, Soul seasoning, chicken broth, and diced tomatoes to the skillet and stir.

Afterward, add the gnocchi and then stir. Let it cook for 5-7 minutes, stirring constantly so it won't stick to the skillet. The sauce will thicken.

Taste the gnocchi. Add the parmesan, basil, and mozzarella, and stir until the cheeses are melted. Add salt and pepper.

The gnocchi will cook in the skillet with the rest of the ingredients.

Substitutions and Variations:

If you don't have soul seasoning, you can use Italian or any other seasoning you want.

If you prefer fresh basil, use that instead of dried. I didn't have any fresh, so I used the dried basil, but it tasted great.

Do you have some dried herbs on hand? Then add them with the basil.

If you are not a fan of chicken broth then use veggie broth or dry white wine.

What to Serve with Gnocchi?

If using gnocchi as the main meal then add bread and salad. It is also great with chicken.

This is also good as a side meal just add grilled chicken with roasted vegetables, baked lamb chop with thyme or rosemary, pulled pork with BBQ sauce, baked salmon with dill sauce, or steak with garlic herb butter. There are many options for using gnocchi as a main or side dish.

You can also eat gnocchi by itself.
