Spread joy with this Pavlova recipe

So many moments taken for granted because we all are in a rush. With this beautiful pavlova, I wish to remind you, enjoy life, and savour every moment of it.
Just this Weekend I found myself wondering, how many moments in my life have I actually enjoyed. In the daily rush you don't really think about it, but when you put your mind to it, do you truly savour every moment of your life? Hopefuly this inspires you to go do something fun, and really enjoy doing it. Perhaps you could make this delicious and summer ready pavlova, That is sure to bring joy to each and everyone eating it!
Wild forest berry Pavlova recipe:
For the meringue base:
- 4 egg whites (About 120 grams)
- 225g caster sugar (1 1/8 cups)
- 0,5 tsp white wine vinegar (Gives that marshmallow like texture when baked)
- 1 tsp cornflour
- 1 tsp vanilla extract
For toppings:
- About 500 grams of berries
- I used a mix of blueberries, strawberries, Cherries and Wild Strawberries (that I foraged in the woods, you can use any fruits/berries you like)
- 300ml Heavy cream
- 2tbsp icing sugar
Recipe:
- Heat oven to 145C. (290F)
- Whisk 4 egg whites until they form stiff peaks, then whisk in 225g caster sugar, a tablespoon at a time, until the meringue looks glossy.
- Whisk in 0,5 tsp white wine vinegar, 1 tsp cornflour and 1 tsp vanilla extract.
- Spread the meringue in desired shape (preferably a circle), creating a crater by making the sides a little higher than the middle.
- Bake for 1 hour, then turn off the heat and let the Pavlova cool completely inside the oven.
- When the meringue is cool, chop about 150 grams of berries and mix them with a tablespoon of icing sugar.
- Place in a food processor, blitz until smooth, then push the fruit mixture through a sieve.
- Whip 300ml heavy cream with the remaining 1 tbsp icing sugar and spread it over the meringue. Pour the delicious berry coulie aka pure over the cream Add the remaining 350g of cut berries on top!
Tips and tricks :)
To get a nice round circle you can take a plate and using a pencil make a template on your baking paper, so all you have to do is spread the meringue acording to the template!
If possible let the meringue base cool in the oven for atleast 15 minutes before moving it, this will ensure a crack free pavlova, if you get a crak it's all good, it will still be just as delicious!
Adding the vinegar with cornstarch helps get the chewy texture in the inside but let's your pavlova stay crispy on the outside!
Make sure to add enough berries or fruits, since it balances out the sweeter meringue base!
Be creative and experiment with different fruits and flavours!
You could make bite sized pavlovas, they're great at a party!
Be careful when dividing egg yolk from white, and make sure that your equipment is fat free, you can do that by wiping it with a little bit of vinegar.
Make sure that your egg whites are room temperature, I find this helps them whip up better!
