Perfect apple pie for the autumn cozy holiday vibes

Maple apple pie.

I truly belive that there is nothing better than an apple pie on a cozy autumn evening. Apple, cinnamon and maple syrup, makes your mouth water just from saying it, doesn't it. Enjoy the recipe and most of all the Pie!

RECIPE FOR THE APPLE PIE:

For the cinnamon Dough (shortcrust/sable) :

300g Ap flour

200 Butter

tsp salt

60g powdered suggar

10g cinnamon

(A tsp of ice water if necessary)

For the apple pie maple filling:

Maple butter Sauce part:

9 Tbsp unsalted butter

3 1/2 Tbsp flour

1/6 cup water

1/6 cup maple syrup

3/4 cup light brown sugar (gives that nice molasses)

Apple part:

900 g Granny smith apples (2 pounds) (Peeled, Cored, Cubed)

1 Tsp cinnamon

1 Tbsp lemon juice

Preperation of the apple pie:

Start with the dough: (it preferably needs 30 min to chill in the fridge)

  1. Mix all the dry ingredients together, add cubed and chilled butter.
  2. Rub the butter pieces between your fingers and incorporate the flour mixture, or place the mix with butter in a food processor and pulse until it just starts to come together ( If needed add a Tsp of ice water at a time until it comes together)
  3. Once the dough has came together dump it all out on plastic wrap and wrap tightly (forming a disc roughly 15 cm in diameter) Place in the fridge to chill.

Next up Maple butter sauce:

  1. Place the butter in a medium sauce pan over medium/low heat. Once melted add flour and cook the mixture for 1-2 min, stirring constantly.
  2. Whisk in water, maple syrup and sugar, simmer for 4 min on low heat, or untill it reaches caramel sauce like consistency.
  3. Let it cool, for atleast 5 min.

Apple part:

  1. Simply core and cube all of your apples, toss with cinnamon and lemon juice.
  2. Once all mixed, add the Maple butter sauce and combine, so all the apples are coated evenly

Pie assembly:

  1. On a floured surface, cut 2/3 of the pie dough and roll until round and about ⅛-inch (3 mm) thick.
  2. Roll the dough around a rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
  3. Add the apple pie filling and make sure that it's evenly spread out.
  4. with the rest of your dough roll it out and make desired decorations for your apple pie. I foraged some maple leaves and used them as a stencil to cut out autumn inspired design.
  5. Once decor is done, place it on top of the pie. Make sure to flute or crimp the edges of your pie.
  6. Brush the dough with egg wash (1 egg beaten) and sprinkle with a bit of brown suggar
  7. Bake the pie 205 Celcius or 400 Fahrenheit for 50-60 min, or untill the apple pie is golden and apples inside are soft.
  8. Let the pie cool for 5 min before serving
  9. Serve with vanilla ice cream or whipped cream (Optional)

Tips:

Best served warm with a nice ball of vanilla ice cream

Make sure to work quickly with the dough, since the butter in it can start to melt if it gets too warm.

Pre-heat your oven to 205 C or 400 F

Make sure that the apple cubes aren't too big since they need to cook through to be soft.
