My take on shredded chicken taco's

Adobo Chipotle Shredded Chicken
Boneless Skinless Chicken Breast
Little can Chipotle Pepper in Adobo sauce
Garlic Paste
Cilantro Paste
Sea Salt
Fresh Ground Pepper
Garlic Powder
Vegetable Packet
Chicken Packet
Creamy Italian Dressing
Flour Tortillas
American cheese
Red Onion
Medium Grain White Rice
With your boneless skinless chicken breast you are going to want to butterly it, cutting it directly through the middle so you have two even size pieces. No pounding necessary since it's a 24 hour marinate it'll tenderize the chicken for you. For the marinade your going take the can of Peppers and depending on the amount of heat your looking for and the amount of chicken your going to be cooking that day, I enjoy the spicy so I went for two Chipotle peppers per chicken breast adding about a tbsp of the sauce for an extra push of spice. In the bag your also going to squeeze in some garlic and cilantro paste, mix together and lay flat on a cookie sheet or baking dish. Put in your fridge, this can be for 4-6 hours but best if overnight.
Hello everybody and thank you for reading!!! I appreciate the time, you're going to love my shredded Chipotle Adobo Chicken tacos served with Cilantro rice. Its an amazing twist on classic shredded chicken tacos. I came up with this dish while I was in a hotel room and in the mood for a different kind of taco. I watch a lot of foodnetwork so my brains always thinking of something new to add to my recipe book. Please try out my recipe and tell me what you think and what your twist to make these your tacos.
After the chicken has marinated, take the chicken and peppers and add to a pot of boiling water. We’re going to leave it on a high heat until water has reduced about a quarter, cover and reduce to medium low heat and simmer for about 45 minutes to an hour, until you can put a fork through, and with a flick of the wrist the chicken shreds. While the chickens are cooking you're going to want to cook off some white rice, you know the drill 2 to 1 and don’t forget to oil and salt your water. When your rice is fully cooked you're going to add 2 tbsp of Garlic and Cilantro Paste and fluff up real nice. Now with your flour tortillas you want to take 2 slices of american cheese per tortilla, now you can warm these up whichever way you would like. I just put mine in the microwave for 30 seconds so the cheese is soft, not too hot and melted just warm. Slice your red onion thin and layer it on your warmed cheese. After you have shredded your chicken, yes there is more! You my friend are going to add in the Shredded Chicken, which should be fully shredded at this point and the sauce or liquid is reduced by half, 4 nice tbsp of creamy italian dressing and mix.
Wow that was an easy dish right, salty, spicy, and tangy all in one dish. You can also make this dish with almost anything. Having it as a main protein for stuffing taquitos to making a spicy chicken lasagna. With chicken the possibilities are truly endless Just WING it..... You'll have your friends and family happy.
