Biryani is one of the popular slow cooked rice dish in Asian countries specially in India and Pakistan and this special dish usually served only for special occasions such as weddings, parties, and various festive seasons such as Ramadan,Eid etc.
Though biryani is one of my favorite dish.Cooking biryani at home is very long process so i only make it on holiday or once in a month.

Shrimp Biryani

Shrimp biryani is one of the delicious spicy variant biryani dish,which is cooked in mouth-watering prawn curry is superb easy to make in a microwave oven.While serving shrimp biryani sprinkle with fresh cilantro and fried onions on top.
Ingredients
- 3 large shallots, halved and thinly sliced
- 6 tablespoons unsalted butter, melted
- Kosher salt
- 1 pound large shrimp
- 2 teaspoons finely grated peeled fresh ginger
- 2 cloves garlic, finely grated
- 2 teaspoons curry powder
- 1 teaspoon garam masala

Chicken Biryani

Chicken biryani is one of the delicious rice dish,where long grain basmati rice layered on chicken,sprinkling ghee,yellow saffron milk,brown onions, pudina leaves on top of rice,then seal the opening mouth of pot and cook in slowly for some time until it gives authentic taste.Though it takes long time for cooking biryani, but ultimately it's worth it.
Ingredients
- 4 tablespoons vegetable oil
- 4 small potatoes, peeled and halved
- 2 large onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon minced fresh ginger root
- ½ teaspoon chili powder
- ½ teaspoon ground black pepper
- ½ teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 2 medium tomatoes, peeled and chopped
- 2 tablespoons plain yogurt
- 2 tablespoons chopped fresh mint leaves
- ½ teaspoon ground cardamom
- 1 (2 inch) piece cinnamon stick
- 3 pounds boneless, skinless chicken pieces cut into chunks
- 2 ½ tablespoons vegetable oil
- 1 large onion, diced
- 1 pinch powdered saffron
- 5 pods cardamom
- 3 whole cloves
- 1 (1 inch) piece cinnamon stick
- ½ teaspoon ground ginger
- 1 pound basmati rice
- 4 cups chicken stock

Vegetable Biryani

Vegetable biryani is nothing but the vegetarian version of non-veg biryani. This biryani recipe is very popular among vegetarian peoples who don't eat chickens but want to taste biryani in vegetarian versions,which is not only tastes delicious but also very easy to cook at home.The complete preparation of this veg biryani is same to chicken biryani;the only diffrence is the use of fresh vegetables instead of chicken.
Ingredients
- 3/4 cups basmati rice
- 1 tablespoon unsalted butter
- 2 tablespoons golden raisins [optional]
- 2 tablespoons blanched, sliced almonds
- 1/2 teaspoon turmeric
- 1/4 teaspoon whole cumin seeds
- 1/4 teaspoon whole coriander seeds
- 3 whole cardamom pods
- 1 cinnamon stick, broken in half
- 3 cups water
- 1 teaspoon kosher salt
- 2 tablespoons unsalted butter
- 1/4 small yellow onion, thinly sliced
- 1 tablespoon peeled, minced fresh ginger
- 2 cloves garlic, minced
- 2 tablespoons golden raisins [optional]
- 2 tablespoons blanched, sliced almonds [optional]
- 1 1/2 teaspoons whole coriander seeds
- 1/2 teaspoon whole cumin seeds
- 5 whole cardamom pods
- 1 cup small cauliflower florets
- 3 ounces green beans, cut into 1-inch pieces
- 3 small new potatoes (about 6 ounces), peeled and quartered
- 1 medium carrot, cut into 1-inch pieces
- 1 teaspoon kosher salt
- 2 tablespoons toasted shredded coconut [optional]
- 2 tablespoons toasted blanched, sliced almonds [optional]
