Ingredients:

  • 1 cup rice
  • 2 cups water
  • 1/2 cup tamarind juice (made from soaking a lemon-sized ball of tamarind in water)
  • 1/4 cup peanuts
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 2-3 dried red chilies
  • 1/4 tsp turmeric powder
  • Salt to taste
  • Curry leaves (optional)

Instructions:

  • Cook the rice with 2 cups of water and set aside to cool.
  • In a pan, heat the oil over medium heat. Add the mustard seeds and let them splutter.
  • Add the cumin seeds, chana dal, urad dal, and dried red chilies. Fry until the dals turn golden brown.
  • Add the peanuts and fry until they turn golden brown.
  • Add the tamarind juice, turmeric powder, and salt to taste. Mix well and let it cook for a few minutes until the raw smell of tamarind disappears.
  • Add the cooked rice to the pan and mix well. Make sure the rice is coated with the tamarind mixture evenly.
  • Turn off the heat and garnish with curry leaves (optional).

Serve the Pulihora hot or at room temperature.
