Pumpkin Roll

Autumn and Winter are My favorite seasons. Southeastern United States can be hot, muggy, sweaty and humid. It was great to spend time at my other Grandparents because they have a swimming pool. However, My favorite Grandparents were Mamaw and Papaw. Every Sunday at My Grandparents we participated in the tradition of gathering for Family Dinner. Although often all that were present were They and I, the family was always welcome. The staple entree was always Baked Bottom Round Roast Beef.

As it was baking, and Mamaw was finishing the desert and other side dishes, my Papaw and I helped. At least we tried to help. Once Papaw made breakfast and even the scrambled eggs were not identifiable. It’s obvious who that Mamaw was House Chef and I’m glad. Whew!

Mamaw brought the bowl of boiled noodles to the dining table as she peeled potato’s and cooked other vegetables, bread, and the desert while Papaw and I placed one layer of cooked macaroni noodles as We were cautiously sneaking slices of cheese each time Mamaw would look away or as she was peeling potatoes. Somehow She never seemed to notice and it always turned out delicious. A layer of extra sharp cheddar cheese, upon a small layer of Mueller's Macoroni repeated four times pouring a small amount of sweet evaporated milk over each layer was the basic recipe.

The sound of the electric carver resembling a miniature chain saw was a sign that the My Family Sunday Dinner was beginning. The gravy was poured over the mashed potatoes, a blessing of gratitude to Our Lord was spoken and We began to eat.

Then came deserts if I finished my plate which I often did quite hastily. My favorite was recipe is Mamaw’s “Pumpkin Roll”. She seemed to enjoy spending so much time prepping and cooking it and it wasn’t until I became an adult and tried to make it myself that I realized baking is a bit complicated and requires practice to get it just right.

Even still not even my Mother could bake Pumpkin Roll as great as Mamaw. Its typically served chilled so it was also delicious in the hot Summers, yet it seems impossible to imagine a better tasting Fall or Winter Desert. Give it a taste by baking it following this secret recipe. I dare you. Enjoy!
