Vegan/Keto Smoothie Bowl

If you had told me a year ago, just finishing up my Bachelor's degree, that I would be eating anything that didn't remotely resemble a Waffle House meal for breakfast I would've told you that you were absolutely out of your gourd. That being said, it turns out that being locked in an apartment during a pandemic will do absolutely mind-boggling things to you, and I find myself buying Pea-Milk (Soy milk and Oat Milk make sense, who milks a pea??) and two bags of granola a week. This is not a confirmation on how healthy I am, this is your warning to run the other direction if you want to keep enjoying sausage links.
I think a big part of any diet is being able to indulge and love what you eat. Every meal and every addition should make you feel proud to put it in your body regardless of your cooking skill! Any good smoothie can be improved with whatever you have available, healthy fats and sugars will keep you boosted throughout your day as well, and I love taking my smoothie bowls to work or eating them on my patio without any guilt at all.
A smoothie bowl can really brighten up your day, and if you ever crave cereal but Lucky Charms turn your stomach then this is for you. I really prefer recipes that don't require a lot of technical experience and even less time. Whenever I have this dish; I feel energized, not hungry but not overly full, and I can say, "Oh, you had a muffin for breakfast? I had a smoothie bowl" and you can watch the light drain from their eyes as they realize that you are and will always be cooler than them. All you'll need is:
- 3/4 cup of some nice vegan granola, maybe throw some ethically sourced cacao nibs if you really want to add a rich taste and flex on your Facebook friends
- 1 cup fresh or frozen fruits of your choice, I prefer frozen strawberries and some other kind of frozen smoothie fruit blend (that Walmart has not run out of yet) with pineapple, mango, or some berries. Bananas will mask absolutely any other flavor in your smoothie, so choose wisely
- 1-2 handfuls of spinach!!! This is it, folks, this is how you can trick yourself into eating healthy. If you add banana to your smoothie, you can add more spinach because you will not taste it
- 1/4 cup vegan milk, I like unsweetened pea milk because it doesn't have a strong taste, it's just for a nice creamy texture and silkiness
- 1/4 cup of vegan yogurt, try to match the flavor of the yogurt to whatever milk you choose (Used soymilk? Use soy yogurt. Cashew milk = cashew yogurt) because you don't want too many flavors punching you in the face. Something with vanilla will also add a nice touch
- A sweetener! I like maple syrup, the amount will depend on taste entirely, just pour in what you have until your heart tells you to stop. Add a drop of vanilla extract if you didn't choose a vanilla yogurt perhaps
Now everything but the granola goes into a blender! If you used frozen fruit you don't have to add ice, otherwise throw some in that Nutribullet you used once when it first came out 2(?) years ago. If it's too thin, add more spinach or fruit, if it's too thick, a tad bit more milk. Blend until smooth and pour in a bowl. Add your granola and there you go! Add a sprig of mint or a sprinkle of extra blueberries on the side of your bamboo spoon and post in on Instagram to prove that you are doing this whole life thing right!
