  • 3/4 cup (175 ml) quick-cooking oats, uncooked

Preheat oven to 350F degrees and line an 8x8 inch baking dish with parchment paper

- set aside.*In a large bowl using a handheld or stand mixer fitted with the paddle attachment, beat the butter on high speed until smooth - about 30 seconds to one minute. Add the brown sugar and beat on high speed until creamed - about 2 minutes.

*Beat in the egg, followed by the vanilla extract, then beat in the peanut butter just until combined.*With the mixer running on low speed, slowly add in the dry ingredients (flour mixture) until everything is combined.

*Pour half of the dough evenly into the pan then spread with grape jelly leaving about ½ an inch border around dough then sprinkle remaining dough over the top in small clumps (you don't have to use it all). Gently press down on some of the clumps so they stick slightly to jelly .

*Optional step - before placing bars in the preheated oven, lightly swirl additional jam on top for more prettiness! Bake for 28-33 minutes or until lightly golden brown around the edges but still soft in the center when gently pressed with your fingertips

- don't overbake! Allow bars to cool completely before cutting into them as they will fall apart if cut warm from the oven."
