Nothing said summer to me louder then a Watermelon Casserole

Summer 2022 is going to be the most healthy as well as adventurous to say the very least. let me explain:

As though waking up in a puddle of your own sweat while having a wet dream about the most conversational fruit known to man, yes... you guessed it, Watermelon.

so the night before was a blast, to the point that I had over indulged in watermelon Margaritas. Grudgingly I accepted an offer to go on a sisters night with my sister and her sisters. Being the introvert of the bunch, they know that i'm iffy when it comes to going out, being surrounded by lots of drunk or damn near drunk individuals that I have no clue as to who they are.

Long story short is that I ended up saying yes to the offer, when i got picked up, I knew it was the point of no return. I had taken a little time to pick out an outfit that was going to assure that i was able to move, if I wanted to bring out some of the twerking workouts that i had been learning. I chose to ware my thigh boots and they made me feel like a million bucks.

We get to the spot, it was classy, we has a nice sized section with bar service, it was cute and I was feeling it. When I arrived some of the sisters were already there, I walked up and there were little drinks that had little watermelon gummies on it, I was like okay this looks different but I can dig it. I picked one up & they were nice and chilly on a hot evening in the south.

I sipped the drink and it was haven on earth, I mean it was so balanced and not too sweet, the patron was not so strong to me either. I really enjoyed the watermelon margarita. I can honestly say that there were at least ten small cups passed to me that night of just the Margarita alone, I was feeling myself. We dances, sand and had a marvelous time.

Needless to say that the next morning I was bed ridden literally, I was sore from what ever I had done the night before. I felt cramps in my toes and I was like what the heck, in a good way. I got up and went to the kitchen because I was craving fruit as usual, I got the water melon from the pantry, cut it in small sections so that I could eat as much as i could because i was very parched.

I cut the fruit from the rind with a small ice cream scoop in circles added some grapes, strawberries, in a cup of yogurt. After using half of the piece that I had, I thought of the meal prep that I had incorporated in my lifestyle years ago when I was counting calories, i thought of using the entire watermelon as well as the seeds, knowing that, if not for the seeds I wouldn't have inherited this beautiful watermelon patch, that's another story.

I decided to whip up a good ole batch of watermelon Vegetable Casserole with Baby Spinach, Shredded Carrots, Shredded almonds, Watermelon Cubes and Feta cheese, all tossed together with Oriental dressing. Just delicious.

Also I prepared;

Watermelon chicken salad: Watermelon of course is the main ingredient. Cherry tomatoes, feta, arugula and red onion.

Watermelon Tomato feta Salad: plain yogurt, brown sugar, grated lime zest, lime juice, salt cubed cooked chicken breast, green grapes halved, peeled mango, chopped watermelon, roasted pistachios

Watermelon bread: Watermelon with seeds, flour, baking soda, baking powder, salt, allspice, nutmeg, sugar, butter, softened, Greek yogurt, eggs.

I recently realized how nutritious the rind is. ill check out some and let you know how it all panned out.
