Cut the avocado in half and remove the pit. Scoop out the flesh into a bowl and mash it with a fork until it is smooth. Add salt and pepper to taste. Heat a non-stick pan over medium heat. Melt the butter in the pan. In a separate bowl, whisk the eggs until they are well-beaten. Pour the eggs into the pan and let them cook for about 30 seconds. Use a spatula to gently scramble the eggs, stirring constantly until they are cooked through but still moist. Spread the mashed avocado onto your toast. Spoon the scrambled eggs on top of the avocado. Add a sprinkle of salt and pepper if desired.Serve and enjoy!
