Lentil Soup
Fall: The time of year when the air is starting to cool and you can just feel fall approaching and when I tend to make a lot of soups. I don't know about you but during this time of year, I always feel cold and since I can really only drink so much coffee, I make soup.

COOKING FOREVER
Cooked in a slow cooker, the chicken casserole is an everyday thing for our dinners. It is not a very hard or time taking process to cook it and hence one of those suppers that you can truly toss in whatever vegetables you have going extra, and it works wonders!

Crispy skinned barramundi, lions mane infused cauliflower puree with citrus salad
As a chef, I'm asked what your favorite food to cook is, and the answer is everything. When I think of the most fun I have ever had inside a commercial kitchen I would have to say I enjoy the depths of the deep blue sea and all the fantastic creatures that call it home and its simplicity when cooking healthy and tasty meals. Seafood can rarely carry itself and needs help from the land to complete the meal and the experience.

Sauteed Mushrooms
One thing I really miss from the days before I was diagnosed with Celiac - besides bread - is mushroom tarts. One of my fondest memories from when I was a child is making mushroom tarts with my mom for family gatherings. Growing up, it seemed we had family over for birthdays, weddings and holidays every other week. So plenty of time was spent in the kitchen making cookies, pies, tortierre and my favourite - Mushroom Tarts.

Cakey, EASY, Peach Cobbler
Who hates having to scroll through 10 paragraphs of inspirational garbage before finally being able to find the actual dang recipe buried somewhere at the end? Yeah, me too. That actually ranks among the top, if not at the tip top, on my list of random annoyances. I don’t care about what this recipe makes you think about or how it makes you feel. All I’m here for is the main point! So why am I leading with what I despise?

Roasted Mushroom Potato Salad
Many mushrooms are pretty, like the one in the above photo. But, beware of eating just any old mushroom you may find in the woods. Generally, the prettier the mushroom, the more chance of it being poisonous. This is why I opt to buy my mushrooms at the store. However, if you are the foraging type, take care and know which mushrooms are edible before popping it in your mouth.

Hamburger Helper
Around the holidays, two things start to become the focal point. Those two things are family and food. With the way 2020 has gone, there has been a strain on people nation and world wide. People haven't been able to see family the way they have been able to in the past, and the holidays are going to be spent a little differently.

Chicken Tortilla Soup
It’s spicy, delicate, zesty, and has an unctuous chicken flavor. It’s the first soup recipe I’m writing about simply because it’s a dear favorite of mine. This is an adaptation of a recipe I picked up in Texas, on the border of Mexico. I’m very grateful to have it with me up North this winter in Wisconsin.
