I have raved over this recipe on my blog and Instagram. Make it and you'll see why! Us moms do not always have that much time to prepare dinner, but this is too easy. The hardest part is waiting until dinner to dig in. Spoiler alert: this chicken should rest for 15 minutes or so before cutting. This will help the chicken to stay juicy. What I like about this recipe is it saves so well. You can snack on it for a few days or save it for another recipe! I should probably just keep one of these around lol.

Accessibility Means Access To Food
I was originally writing this as a Facebook rant. Unfortunately for the world at large, I'm off this week and have way too much time on my hands. I spent the morning in conversation with a visually-impaired book editor. We were discussing what conlangs (constructed languages, i.e. fantasy or made up languages like Klingon and Sindarin) mean for accessibility when a person needs a screen reader. Turns out, it generally isn't an issue if the screen reader can read it and the website or story is formatted correctly (lots of food for thought there, no pun intended). That got me thinking about how the world views people with invisible disabilities, like severe food allergies or autoimmune disorders that are triggered by food.

Recipe creation for advance kitchen users
There are only two ways to make new food. First, make something up. Mix random stuff and see what happened. Like mixing pasta with the cheese and beans with a little smoked paprika, sweetcorn, oregano, salt pepper and a BBQ sauce for the smoky feel to bind it all together. Then bake it and once baked put it in the wrap with some slaw. A BBQ Bean Mac’n’Cheese Burrito. Smoky creamy delicious pasta in the easy form. Sounds amazing doesn't it? Except I haven't actually made this. I made it up, it took me 20 seconds. I can't say whether it's tasty or not but it certainly can be once it’s cooked a couple of times. Imagine it!
