My Coffee Journey
I find it amusing, thinking about how much I love coffee now considering my first few encounters with it. I haven't always loved coffee. I remember the first time I ever tried it. I was in the car with my dad on the way to school when I slipped a sip from his travel mug just as he looked in the other direction. I instantly regretted it. I had been led to believe from media everywhere that this mysterious drink was the thing that kept the world turning. Nothing could be done before a coffee fix had been had. So you can imagine my disappointment when I wasn't greeted into the exclusive club of coffee drinkers by a warm mouthful of liquid gold that would change my life forever, but instead by a luke-warm and bitter—yet bland—slap in the taste buds. I didn't get what the hype was all about, and I wouldn't for the next few years.

The Magic of the Empanada
“All you need is flour, eggs, and water,” is a funny little saying that my mother would say so loud and proud. As a child, I only worried about starting a day with a quest—typically wrapping my bed sheet around my body like a shawl with a hoodie. A quest that would start from the Sahara Desert to Amazon Jungle. Never to think, nor understand those eight little words that can be so easily missed. I was a naïve puppy looking at their owner as they talk in some embarrassing way that’s slow and dumb sounding. All the puppy was able to dow was sit there with its ears collapsed on both sides, tilting their head with a cute but confused look on their face, but yet so interested. That was evident whenever my mother would say those eight little words. I never did understand, until recently in my life, on an evening during my winter break.

What's Wrong with Whole Foods?
I spent four years of my life in Decatur, GA attending college. Although I was born in New York, I identify closest with Georgian suburbs and the metro-Atlanta area. When I was in high school, one of my family’s favorite things to do on the weekends was to go the big Whole Foods store thirty minutes away. We loved their warm yet industrial interior and intense hot food bar selection, and colorful gelato. My parents loved the clean floors and selection of health food vitamins. I particularly loved their selection of cross-cultural foods. I felt like Whole Foods's selection gave me the tools to make almost any food I wanted to try. However, like many students, during college, I was too poor and too far from Whole Foods store to shop there. Alternatively, I would begin to shop at Decatur's local Dekalb farmer's market after hearing about their great prices on food. In my later years of college, I studied abroad in Germany and South Korea. It was this culmination of trips when I rapidly fell out of love with shopping at Whole Foods.

Mise en Place
What a whirlwind couple weeks have flown by! This has been my first taste of culinary education and it's amazing thus far. For those who have attended culinary school, this week's title probably takes you back to the very beginning of your education. I have found out very quickly that the sentence "Prepare your Mise!" is a daily utterance from all teaching staff; this mantra must send many of you down memory lane. For those who neither work in the industry or speak French; 'Mise en Place' means 'everything in its place'.

Leftovers
There are often mixed opinions when it comes to leftovers. Some people love them, some people hate them. Some people even intentionally make too much food so that there will be leftovers. Others go out of their way to ensure that all bits of the meal get consumed in a single sitting.

Happy Birthday. Top Story - February 2018.
“A few of my friends and I are going out for my birthday next week. Do you want to join us?” I looked at Lilia in shock. We had only been roommates for one semester, and although we got along well, I had never hung out with her and her friends before. Of German and Spanish descent, but born and raised in Toronto, Lilia was beautiful, trilingual, and the most musically inclined person I had ever met.

Coffee is Life
I began drinking coffee, in one form or another, at the age of thirteen. For me, it started out as French vanilla cappuccinos. These ridiculously sweet beverages appealed to the teenage version of me. They offered a nice energy boost from the sugar and the caffeine kept me going throughout the day.

Frolics, Food, and Family
16 April 2016 was the day we found out our family was going to grow larger. We were pregnant!! My wife (girlfriend of 10 years at the time) and I had just finished a great meal at our local pub and decided to make the move to the bar. The plan was to enjoy a pint, or seven, before we went home for the night. I had ordered two pints of ale and turned to look at my wife (girlfriend of 10 year at the time) who resembled to shade of a white cotton blanket which was being thrown around by the tumble dryer.
