Ingredients:
4 tablespoons of cooking oil
¼ teaspoon of salt
¼ teaspoon of turmeric
2 medium potatoes, diced into small cubes
2 medium onions, sliced thinly
½ teaspoon of salt
7 cardamom pods
2 small sticks of cinnamon
8 cloves
3 small bay leaves
8-10 black peppercorns
1 tablespoon of garlic paste
1 tablespoon of ginger paste
1 kilogram of chicken, cut for curry
¾ teaspoon of turmeric
½ teaspoon of red chili powder
1 teaspoon of Kashmiri chili powder
1 teaspoon of salt, to taste
1½ teaspoons of coriander powder
1 teaspoon of cumin powder
½ teaspoon of garam masala
2 cups of hot water, as needed
¼ teaspoon of roasted cumin
A small pinch of sugar.
Instructions:
In a pan, heat 4 tablespoons of cooking oil. Add ¼ teaspoon of salt and ¼ teaspoon of turmeric, and mix well.
Add the cubed potatoes and fry them until they turn light brown. Set them aside.
In the same pan, add the thinly sliced onions along with ½ teaspoon of salt. Sauté until they become golden.
Next, add cardamom, cinnamon sticks, cloves, bay leaves, and peppercorns. Sauté until they become aromatic.
Add a splash of water, then incorporate the garlic and ginger paste. Sauté for 30-40 seconds until it becomes fragrant.
Add the chicken pieces and mix thoroughly. Then, add ¾ teaspoon of turmeric, ½ teaspoon of red chili powder, 1 teaspoon of Kashmiri chili powder, and 1 teaspoon of salt. Sauté for 5 minutes over medium heat.
Cover the pan and cook on low heat for 5 minutes to allow the chicken to release its juices.
After 5 minutes, uncover, mix well, and then add coriander powder, cumin powder, and garam masala. Stir well, cover, and cook for 10 minutes on low heat, stirring occasionally.
Add the fried potatoes and mix them in. Pour in 2 cups of hot water as needed and adjust the seasoning. Cover and cook until the potatoes are tender, which should take about 12-15 minutes on low heat.
Finish by adding ¼ teaspoon of roasted cumin and a tiny pinch of sugar. Mix well and serve.
