Rocky Road is for Everyone

A decadent vegan fudge that will incite savoury sighs from vegans and non-vegans alike.

Melt in your mouth fudge, chewy marshmallows, crunchy almonds, chocolatey chips.

This fudge is what you and everyone you share it with will crave on those sweetly special warm summer evenings together. This sweet treat is the perfect post barbecue snack that any guest will enjoy, vegan or not! It’s best to make a double batch so everyone can go back for seconds.

Imagine, the trees around your yard are moving in the evening breeze, full bellies blissing out around a soon to be camp fire, you feel the shift into evening sending the signal that it's time to cool off. The message from the breeze reaches your mind too and you know it's time to head inside to your freezer and bring out the plate of that melt in your mouth freezer fudge you quickly whipped up earlier this afternoon. You know that soon everyone will be sighing in delight as they dig into this quick and simple desert you're about to share.

It took you less than 15 minutes to create it and pop it in the freezer for later and now is your moment where the whole crew is going to be asking what gourmet fudge shop opened up in town that you must have gotten this from.

You each sink your teeth and tongue into the cool fudge and everyone is immediately asking you:

"What's in this?"

"Where did you get it?"

"You made it! wow, I need the recipe, it's so good."

A smile washes over your face and everyone sinks a bit deeper into that blissful rocky road heaven we all remember from our childhoods.

You know the one, standing outside of an ice cream parlour getting ready to pick your current favourite flavour and suddenly you hear the scooper call out a name and holler a rocky road into the crowd. Your body instantly remembers the semi frozen chewy marshmallows, the tender and deliciously dense chocolate chips, the crispy crunch of the pieces of almonds. All surrounded by a rich and creamy chocolate. In that moment of remembrance you decide to take the rocky road home.

There's something so magical about cold and creamy chocolate packed with gooey chewy clouds of sugar, even more chocolate and grounding chucks of nuts. It really brings back those special memories of having a messy chocolate face and a fresh sugar comma as a kid.

Now, you can re-create that deliciousness in a dense little fudge bar.

The nice thing about this recipe is that it's fast and simple. You get to make fudge without having to bake and mess around with that pesky perfect sugar melting temperature, and you can store it in the freezer for days! That is, if you can make it last that long.

Here’s the recipe:

Ingredients:

1 cup of Nuts to You rainforest blend nut butter (or any other nut butter you prefer)

1/3 cup of coconut oil, melted

1/4 cup pure maple syrup

1/2 teaspoon of Himalayan salt

1 teaspoon of vanilla

1/2 cup of chopped almonds

1 cup of Dandies marshmallows

1 cup Enjoy Life dairy free chocolate chips

Directions:

1. In a pot on low heat, melt together the nut butter, coconut oil, and maple syrup.

2. Turn heat off and stir in Himalayan salt and vanilla. Remove the mixture into a separate bowl to cool of for 5 minutes. This is so the chocolate chips don’t melt when we stir them in.

3. Stir in the almonds, marshmallows, and half of the chocolate chips.

4. Pour the mixture into a 4” baking dish lined with parchment paper.

5. Top with remaining chocolate chips and freeze for a few hours until solid.

6. Remove from baking dish, cut into serving sizes, and store in a container in the freezer for up to 7 days.

Some bakers may say this isn’t baking but I say if it involves creamy fats, sugary goodness, and a baking dish, it sure is! Plus, this dish will blow anyone with a sweet tooth right into pure taste bud delight. This is sure to be a crowd favourite among all kinds of eaters.
