Saucy, cheesy personal pizza just for you!

I am a true believer that the world of food should be open to a person and moderation in all things is a great way to live life, that’s why I specialize in creating macro-friendly recipes that are much easier to “fit” in moderation.

As you get to know me, you will find that all my recipes use a moderate to few amount of ingredients because I also believe that cooking should be stress free and not break the budget. I encourage that for all of my recipes you look into buying frozen rather than fresh to promote longevity of each food item if you do not use it again right away.

In this recipe you will find a light, protein packed pizza! NOW DON’T LEAVE THIS RECIPE YET! While this recipe is lower in calories (and fat!) than your typical pizza shop pizza, it still gives you that delightfully saucy, melty, cheesy taste you crave with no guilt attached.

I love, love, love pizza and I’m telling you, this one tickles my taste buds! It’s an intense medley of cheese with just enough oil coming through to make you feel you aren’t missing anything! This will be a favorite with it’s delightfully flavorful, personal pizza sized package! (Seriously, I bet you could even have two if you wanted!)

I love pairing my pita pizza with either Bolthouse Blue Cheese or their Classic Ranch dressing! These dressing while are yogurt based, making them higher in protein and lower in fat than their typical full fat counterparts, still are full of the flavors you love and have a good thickness! The Bolthouse blue cheese I can only compare to the creamy blue cheese dressing you get with chicken wings!

(Speaking of chicken wings, feel free to pair with one or two air fried wings! And maybe, just maybe, a nice salad for a little healthy bulk! Just the dietitian's suggestion, I had to.)

The original inspiration for this recipe was family get-togethers where I’m faced with a sheet pizza and never feel satisfied. (Even after six pieces, I am not joking!) This personal pizza sized pizza I found more filling and satisfying, (probably a mind game, I’m sure) and I could bring two and feel like I was eating a load of pizza and my own additional bulking foods such as celery and salad to pair with it. Due to the inspirational focal point, the calories are low and protein is a large component! This recipe is great to make as an easy entertaining food, such as at your next Super Bowl Party!

This recipe is suitable for bariatric patients, vegetarians, body builders, anyone who is practicing moderation or just someone looking for a delicious, satisfying pizza recipe without all the calories!

Ingredients

-Joseph’s 60cal pita pockets (I enjoy the pocket because it gives more “crust”)

(I suggest you weigh these if you are on strict macros as they are never correctly portioned)

-30g Fat free mozzarella (Don’t be afraid of the fat free, it melts and still has great flavor)

-35g Wegmans Organic Tomato Garlic Basil Sauce (I love this sauce, no sugar added with just enough oil to make it delightful but not overly greasy!)

-50g Mushrooms

-8 slices (15 g) Turkey pepperoni (optional)

Directions:

-Coat skillet with olive oil spray

-Saute mushrooms on medium heat with garlic powder to taste

-Add tomato sauce, cheese and optional pepperoni to the pita “crust”

-After mushrooms are done put on top of prepared pita and cook on low just to melt cheese and crisp crust

-Plate it up and enjoy!
