Today, I’m thrilled to share with you a step-by-step guide on how to bake a classic vanilla birthday cake from scratch. This is a fantastic recipe for any celebration, and I’m excited to walk you through it. Let’s dive right in and go over the ingredients we’ll need for this cake.
For this vanilla cake recipe, you’ll need the following ingredients:
- 500 grams of flour
- 12 eggs
- 2.5 cups of sugar
- 1/4 teaspoon of nutmeg
- 1/2 tablespoon of baking powder
- 1/2 tablespoon of preservative (I use this to ensure the cake stays fresh longer, especially since it’s for a client)
- A pinch of salt
- 500 grams of butter
- Vanilla flavoring
We’re going to start by preparing our baking pan. Greasing the pan with vegetable oil will prevent the cake from sticking. Make sure to spread the oil evenly throughout the pan. After that, dust the pan lightly with flour, ensuring you cover all the greased areas, and then shake out the excess flour. With our pan prepped and ready, it’s time to move on to making the batter.
Since I’m not using an electric mixer for this recipe, we’ll be mixing everything manually with a bowl and a turning stick. This process takes a bit more effort, but it’s a great way to show that you can still bake an excellent cake without any special equipment.
First, we’re going to mix 500 grams of butter until it’s light and fluffy. This step is crucial and requires some patience. You’ll need to keep mixing until the butter becomes a pale yellow color. Once the butter is properly mixed, it’s time to gradually add the sugar. Make sure to mix well after each addition. Don’t forget to scrape down the sides of the bowl frequently to ensure all the ingredients are incorporated evenly.
Next, we’ll move on to the eggs. Crack the 12 eggs into a separate bowl and whisk them until they become fluffy. Whisking the eggs properly is essential for achieving the right texture in your cake. Be careful not to over-whisk, as this can negatively affect the cake’s texture. Once the eggs are whisked to a fluffy consistency, begin adding them to the butter and sugar mixture a little at a time, mixing thoroughly after each addition.
Now it’s time to incorporate the dry ingredients. Sift together the 500 grams of flour, 1/2 tablespoon of baking powder, and 1/4 teaspoon of nutmeg. Slowly add these dry ingredients to the wet mixture bit by bit to prevent lumps from forming. Don’t forget to add a pinch of salt to balance the flavors and enhance the overall taste of your cake. As you add the dry ingredients, mix them in thoroughly, ensuring a smooth and consistent batter.
After everything is well mixed, pour the batter into the prepared baking pan. Use a spatula to smooth the top of the batter, ensuring an even surface for baking. I also added a teaspoon of vanilla extract off-camera to enhance the vanilla flavor. This step is optional but highly recommended for a richer taste.
Preheat your oven to the required temperature and bake the cake until a toothpick inserted into the center comes out clean. The baking time may vary depending on your oven, so keep an eye on it. Once the cake is done, let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely. This cooling step is important to ensure your cake sets properly and retains its moisture.
